My favorite things to cook
I love cooking with fresh herbs. Fish and chicken are my favorite meats to cook with. Also breaking into the vegetarian realm with tofu recipes.
My favorite family cooking traditions
Being from New England, my mom always made Boston style baked beans. She has used the recipe with just about every bean available. My favorite are the lima beans. She also makes Zucchini Relish each summer, which I have also started doing.
My cooking triumphs
Two dishes that never fail to impress are my Creamy Dijon Chicken with Sweet Potatoes and my Butternut Squash casserole. My stuffed mushrooms are usually a hit too.
My cooking tragedies
Meatloaf. It never comes out right for some reason.

Hot Pepper Jelly
I followed some of the suggestions given here and used 4 tablespoons of pectin instead of 3 1/2. It still came out slightly runny. I opened one and put it in the fridge and it firmed up quite nice. I'm going to try it with the other jars.

Goof Proof Coconut Curry Chicken
The only reason this isn't getting 5 stars is because I made a few changes. I used a whole can of coconut milk and only used water to mix with the cornstarch. I didn't have curry sauce so I used about 3 tbls. of curry powder. I also used about 2 tbls. of red chili paste. I also threw in some minced garlic and ginger, along with some cilantro and about 1 tbls. of brown sugar. It was delicious!!

Pumpkin Butter IV
This is absolutely delicious. I took the advice of the reviewers and cut the sugar down to about 3 cups white sugar and 1 cup brown sugar. I also added in half a can more of pumpkin and about 1/4 cup of homemade applesauce. It is so tasty!
