Banana Oat Muffins

This makes a really good muffin - I made it exactly as written, except used half whole wheat, half all-purpose flour. The texture is really good with the oats, slightly chewy, and it is not too sweet like a lot of muffin recipes. The only thing lacking, I was thinking, was some spice so next time I make these I will try either cinnamon or cardamom. With some tweaking, this may become my go-to banana muffin recipe.

Cola Pot Roast II

I tried this on a whim for something different than my usual recipe. The family liked like this, but I thought it was just okay and, for my taste, too sweet. My usual recipe is very similar to this but uses red wine instead of the cola and I think the wine adds more depth of flavor. As other reviewers have said, the roast should really be seasoned and seared beforehand, it really does make a difference.

Pumpkin-Apple Muffins with Streusel Topping

Great flavor, but I did not find these to be as moist as I had hoped from reading other reviews. Next time I would use the entire can of pumpkin and reduce the baking time.

Autumn Pork Chops

We really liked this recipe - the flavor combination is different, but balances out nicely. The only thing I would change is to reduce the amount of honey since I would prefer a little less of the sweet. I didn't have apple juice on hand, so I used another reviewer's idea of apple sauce mixed with water and the sauce turned out well.

Orange White Chocolate Chip Beltane Cookies

This cookie has a great texture to it, but I was disappointed with the lack of orange flavor, even after adding an extra tablespoon of orange zest. After re-reading others' comments, I realize that fresh orange zest is needed in this recipe (I used dried zest I had in my cupboard from a bread recipe). I managed to "up" the orange oomph I wanted with an orange glaze as others had suggested. If I make these again, I will probably use the extra tablespoon of (fresh) zest, and add the orange extract some have suggested.

Cinnamon-Topped Rhubarb Muffins

Yummy muffin - even my three year old daughter loved these! The crunchy topping is sooo good. I used frozen rhubarb, which worked out well - next time I will add more as others have suggested and make sure it is more finely chopped. I greased my muffin tin, but these still stuck to the bottom - I would recommend baking for the full 20 minutes and let them cool in the pan for about 10 minutes before removing.
