Avocado Pineapple Salad

This is so good! Very light, refreshing, and addicting! Like others, I used jalapeño instead of serrano. Next time I might add cilantro. This recipe is a keeper!

Stuffed Cornish Hens

Holy yum! The stuffing alone deserves 5 stars. I didn't have water chestnuts or mushrooms on hand, so I increased the celery to 1 cup and added 1/4 cup chopped walnuts. Will definitely make this again!

Black Bean and Rice Salad

I just made this and really like it! Based on others' reviews, I decreased the lemon juice to just under 1/4 cup, used fresh cilantro, and used boil-in-bag brown rice that I cooked separately and just stirred in at the end. I also added celery and a few squirts of lime juice, and I left out the jalapeno and bell pepper. This batch will take care of several meals throughout the rest of the week, and I'm okay with that!

Avocado Feta Salsa

Loved this salsa! I did two avocados instead of one, and used 1 tsp. dried oregano since I couldn't find fresh. It was delicious! I may try it with cilantro instead of parsley next time, but only for curiosity's sake--not because it didn't taste great this time. I liked it better on whole grain pita chips than on tortilla chips. Will definitely make this again!

Autumn Cheesecake

This recipe is wonderful! I followed the recommendations of previous reviewers (doubling the cream cheese filling, putting a pan of water in the oven, adding a crumb topping, letting it cool in the oven, etc.) and was very pleased with the result. I don't own a springform pan, so I just divided everything into two store-bought graham cracker crusts. I kept the baking time and temp the same and just rotated the two cheesecakes halfway through the cooking time when I pulled them out to add the topping. They turned out great, and everyone at the dinner party really liked them.
