Big Germans

Reviewed: Sep. 22, 2013
Mrs. liked this. I felt it was ok. A tad too much butter perhaps. I used unsalted in this recipe. Will make it again since she seemed to enjoy it.

Jay's Signature Pizza Crust

Reviewed: Dec. 21, 2012
Absolutely fab! I've made this crust several times now and it always comes out perfectly done. Have used it in a Pampered Chef deep dish pizza pan, not that I admit to owning one of those. But beats any pie you can order out. This spring I am building an outdoor oven and this will be the crust I use.

Ethiopian Cabbage Dish

Reviewed: Oct. 23, 2012
Had all the ingredients on hand and whipped this up for dear wife for lunch. Was looking for something to do with cabbage and this was the bill. Seldom do we have a meatless meal it seems and I warned the missus that we would be doing vegan. We both enjoyed this dish and are glad to have a new way to fix cabbage. Served it with butter beans... a good match.

Pork and Shrimp Pancit

Reviewed: Jul. 10, 2011
A very flavorful dish! The oyster sauce and chicken broth meld together nicely to provide a base for the bok choy. For the pork ingredient, I used some of a pork butt that I cooked yesterday. The shrimp were added last and brought up to temperature. I will be making this one again. Lucky for me I have plenty of the necessaries on hand!

Sun-Dried Tomato and Blue Cheese Burgers

Reviewed: Jul. 3, 2011
As for flavor, these burgers are five stars. Excellent. If they would only hold together a little better. I lost one of them through the grill grate because it disintegrated. Wonderful flavor but might add just a bit of a binder next time. They went perfectly with the Naan I made earlier.

Naan

Reviewed: Jul. 3, 2011
Phenomenally good! I made the dough early this morning and let it rise until about 45 minutes prior to lunch. Punched it down and added the garlic, formed thirteen balls and let them rise a second time. Meanwhile I whipped together a burger recipe. Lit the grill and cooked the whole lot. Wow! I love this bread! Mrs. and I are on a diet in which together we have lost 130 pounds since January. This bread won't help matters! Excellent! Hoping it keeps well in the freezer.

Beef Paprika

Reviewed: Mar. 2, 2011
Another winner in my book. I really like the flavor, texture and color of this dish. It will go well with noodles, taters or rice. I cooked up a nice batch and put in the deep freeze, after sampling a bite or two of course. The meat is tender and everything blended together nicely. I will make this again.

Round Steak and Tomatoes

Reviewed: Feb. 21, 2011
This is one of our favorite wintertime dishes. The flavors literally burst in your mouth. It works really well with the smashed taters. I season the steaks with a good steak seasoning out of Texas prior to browing them. The canned tomatoes are of a mexican variety so as to get some of the pepper flavor, though bell pepper would certainly be a great addition.

Pressure Cooker Beef Stew

Reviewed: Jan. 23, 2011
It was a fabulous mistake not having a beef stew seasoning packet and substituing the swedish meatball package instead. Great things come from trial and error.

Mustard Glazed Corned Beef

Reviewed: Jan. 23, 2011
Having never really been a fan of corned beef I sure was surprised at how well this dish turned out. The glaze is superb and really adds a nice finish to the meat. After it came out of the oven, I let it rest for about an hour prior to slicing it up on our handy dandy Cabela's meat slicer which was set on a no. 2 setting. It provided just the right thickness for sandwiches which adorned some wonderful homemade buns that the mrs. had made. I know it was a hit because she went back for seconds, something she seldom ever does. Thanks for a great recipe!

Old Fashioned Macaroni Salad

If there is one salad that brings back childhood memories it is this one. Whenever we had a summer picnic it was always on the table. Love it so and glad to have found the recipe.

Maple Salmon

Quite good. I used pure maple syrup made fresh from the sap of the Wisconsin sugar maples that my mother gave to us. We served this with white rice.

Mom's Best Spaghetti Sauce

Reviewed: Dec. 3, 2010
This recipe is a keeper. Better than a jar any day. Like another, I did omit the water, baking soda and parmesan. Just didn't feel it would need those. The sauce was of a perfect consistancey and full of flavor. I served it over a breaded chicken patti crowned with a good bit of mozzeralla. Delicious.

Slow Cooker Dump and Go Cheesy Chicken

Reviewed: Oct. 30, 2010
Every year, the day after Thanksgiving, my friend and I headed for Dale Hollow resevoir in TN to fish for a few days. He used to put this in the slow cooker and let it go all day while we fished in his big Ranger boat with a 150hp Evinrude. We would catch brown bass all day and arrive back to the cabin and the wonderful aroma of this dish, which was served over white rice. Sadly we don't go any longer. But good memories remain.
