Red Salad

I do not like beets but I had a bunch from my CSA that I needed to use and found this recipe. I followed the advice of some other reviewers and chopped up all the produce before boiling. My salad was done in an hour and half. I still do not like beets but this salad was pretty good. I added two hardboiled eggs and chopped raw celery. My church picnic gobbled it all up.

Homemade Black Bean Veggie Burgers

I loved this recipe! I didn't have a full can of black beans so I added kidney beans. I mashed the beans using a potato masher. Much faster than the fork! I used rolled oats instead of bread crumbs- I am trying to stay away from wheat. I added a little red pepper flakes for some extra kick. They baked perfectly and tasted wonderful! No crumbles or falling apart!

Pumpkin Fritters

Love these! I have made this 3 times now- all from the same extra large pumpkin I bought. I cut the pumpkin into chunks sprinkle olive oil, curry powder, black pepper, cumin, ginger, fennel seeds and coriander and bake it in the oven for 40 min. Then I stick it in the blender with all the seasoning (make sure to de-glaze the pan and put in blender) Then I have great pumpkin puree to start with! I add chopped onion and frozen peas to the mix and continue to follow the recipe. It is fabulous every time- tastes great with honey mustard mixed with natural rice vinegar for a dipping sauce.

Barbecued Chicken

My friend who is a big bbq chicken fan loved these. I grilled them and everyone ate them. Had a couple drumsticks leftover and my husband took them to work the next day and declared they were even tastier.

Mexican Turkey Burgers with Pico de Gallo

My picnic(ers) loved these! very falvorful but a little tough to grill on a slow cooking charcoal grill. The burgers were so juicy and big.

Apple Cake

very easy to make and everyone liked it, even my husband who is not a fan of apples. I did not make the sauce because I ran out time before my guests arrived. I used maple cream spread on the top instead.

Flat Dumplings

I did not have any chicken broth so I substituted it with milk like someone else suggested. I also added oregano because I made an Italian dumpling meal. I ran out of pasta so dumplings work great as a fill-in! I did not have any problems rolling the dough. It formed perfectly.
