i used to absolutely hate anything that had to do with cooking or baking and really just being in the kitchen period. but then i got married, had a kid, now we have two kids as well as another on the way, and we can't simply eat boxed or frozen dinners, or take out every day. not gonna lie, i kicked and screamed (inside), and cried and had melt downs at first when things went wrong but now i am actually kinda liking what can happen in the kitchen. i am really enjoying making meals and munchies from scratch, and occasionally adding a little bit of my own flavor.
My favorite things to cook
i love to bake, esp. desserts and breakfast breads. i still find dinner and appetizer recipes a bit intimidating but the more i make them, the more confident i'm becoming. esp. when i hear all of the "mmm's..." and "this is really good, Jenn!"s =)
My favorite family cooking traditions
a tradition i started on my own a couple of years ago was making lots of yummy fudge for the Holidays. hopefully over the next few years i will start making fun traditions in the kitchen with my kids and husband.
My cooking triumphs
so far i have not burnt the house down so i think i must be doing something right!
My cooking tragedies
unfortunately the cleaning fairy has not yet found my dirty dishes and messy counter tops after cooking! oh well.. such is life. =)

Blueberry Zucchini Bread
OMG!!!! I'd give this 10 stars if I could, this bread is DELICIOUS!!!!! Definitely a family favorite. Perfect for dessert, breakfast, a snack; and love that it's actually pretty healthy for you. I did not change a thing.

Peanut Butter Banana Oatmeal Raisin
I had to omit, add and cheat a bit with this recipe, but it still turned out fantastic! I used two bananas, about a cup of peanut butter, two whole eggs and did not add in raisins because I was out. I love that these cookies are healthy, don't require any butter, so I feel a bit less guilty letting my girls, and myself, munch on a few at a time. I will definitely try to make this as written. =)

Greek Pasta with Tomatoes and White Beans
LOVE this recipe! I would recommend getting the tomatoes and beans started while you wait for your water to boil. Doing it this way, both my water and tomatoes and beans were ready to cook at the same time and were done at about the same time, so I think it saved me about 5 minutes or so of cook time which counts when you have two hungry little ones waiting for dinner. =) I also think this could be yummy cold!
