Double Tomato Bruschetta

Cream Cheese Frosting II

I don't give out a lot of 5 stars- it has to be truly fantastic for me to do this. And this icing is FANTASTIC! Don't let the other reviews scare you. It is truly fantastic with two packages of cream cheese. I do add a little bit more powdered sugar to taste, but otherwise perfect! Refrigetate immediately once iced as it melts quickly.

Sausage Hash

A major hit at a work brunch. I used pre-packaged southwestern hash browns and also added garlic. I prepared the hash the night before and baked it in the oven for 20 minutes the next morning to add some crisp. Topped the hash with pepper jack and browned the cheese. The only error I made was that I used lowfat sausage. Will use full fat and drain the fat next time as the low fat does not taste that good.

World's Best Lasagna

I hate to say this - but I had really high expectations with this lasagna. This is very good lasagna, but I've been to enough good Italian restaurants to know that there is better. I cut the sugar in half, but next time I will completely remove the sugar. I do not like a sweet sauce.

This was good, but a little bland. I did follow the recommendations of other reviewers and switched the measurements of the flour and corn meal. I also cut the sugar down to 1/4 cup because I do not like sweet corn bread. 1/4 cup was more than enough.

Pork and Shrimp Pancit

This was really good! Even my husband liked it and he doesn't typically like this style of cooking. Some changes that I made: I used 2 packages of rice noodles instead of one, decreased oil to tablespoons total, increased garlic to 4 cloves, used 3 cups shrimp, 1 chicken breast chopped up (didn't have pork), shredded red cabbage instead of bok chop, 3 tablespoons fish sauce (couldn't find oyster sauce), used about 3/4 cup chicken stock, and added shredded carrrots and peppers. I also used fresh lemon juice at the end which gave it a nice fresh taste. Next time I cook this, I will add even more vegetables (i'm thinking mushrooms and zucchini), add chopped up peanuts, and increase the crushed red pepper flakes.

Fettuccine with Sweet Pepper-Cayenne Sauce

This was my first review 2 years ago: This was OK. I liked it, but my husband found the cream sauce to lack appeal. I don't know how to really add to this recipe and I don't think I will make it again. I decided to make it again and it is now a 5 star recipe! I sautéed peppers and onions until translucent, added a bag of fresh spinach and then added the garlic (add garlic to soon and you scorch it). I then added the 3/4 chicken broth plus a can of diced tomatoes drained and the full amount of cayenne. Simmered it on high until a lot of the liquid was gone. Added sour cream and parmesan after taking the pan off the stove. Had to add a little more chicken broth because I simmered the sauce too much! I recommend others to keep the full liquid and simmer it down because the sauce this time was fantastic! Added salt at the end and my husband and I polished off the entire dish! He loved it too. My only word of caution is the dish is quite spicy if you use the full amount of cayenne. I was sweating by the time I finished.

Florentine Artichoke Dip

This is very good as long as you refrigerate it overnight and then reheat the next day. I ate some right after it was cooked and felt it was bland. The next day, the flavors popped! It was excellent.

Mom's Best Peanut Brittle

This is a very good brittle recipe. I heated the sugar mixture to 305 degrees, added butter first, then nuts, then baking soda. I quickly poured this mixture on a hot pan that I had kept in the oven and shook the pan back and forth to spread the mixture. My first attempt was a failure because I used raw peanuts. Yuck. My second attempt was better once I used unsalted dry roasted nuts. Next time I will use salted dry roasted nuts because I think the combination of salty and sweet will be really good. I added a teaspoon of vanilla to my recipe as others recommended but didn't like it. I doubled the recipe so that I could share with coworkers.

Greek Penne and Chicken

My husband and I really enjoyed this dish and plan on making this again. I followed a lot of the advice of other raters - decreased amount of pasta to 8 ozs, used olive oil instead of butter, increased garlic (even added some garlic powder), used a can of diced tomatoes instead of a fresh tomato, added calamata olives, and increased the amount of feta cheese. I had also purchased heavy cream to add at the end but forgot it and was glad I did - the meal did not need the extra fat. Great recipe!

Greek Honey Cake
