Oatmeal Chocolate Coconut Chewy
Ok, just made these (eating one now!).. They are incredible. I have an oatmeal raisin cookie addict for a fiancé and have had a hard time finding a truely chewy dough recipe... He took one bite and said "this is it!". I followed the recipe exactly, including allowing the butter to soften just by sitting on the counter. I substituted raisins for the chocolate chips, and added 1 tsp cinnamon, 1/2 tsp each nutmeg and ground cloves. If I could give more than 5 stars I would! They are outstanding. I baked mime for 11 minutes at 350, and they are really chewy as promised. Give them a try & you won't be disappointed. Oh, on a side note, I noticed a lot of reviewers saying that their dough was difficult to stir but I didn't encounter this problem at all. My cookies are a bit on the flat side, but it doesn't bother me at all.

Pumpkin Bars I
Perfect! Double the cake recipe as suggested for a great 9x13 cake. Also, instead of 2/3 cup pumpkin puree add one whole 12 oz can per batch, it's amazing.

California Roll Salad
Absolutely delicious! This salad will definitely help to curb your sushi craving if you can't get to a Japanese restaurant. We grew up in large cities with lots of great sushi places but now live in rural New Mexico, where there is no sushi at all. So we make this every time we have the urge! There are a few things I would suggest to improve the ease and taste: 1. We don't add the lettuce leaves, we just make it a rice, veggie and surimi salad. 2. We always add about a teaspoon each of black and toasted white sesame seeds for a pretty and tasty touch. 3. According to your taste, matchstick carrots are another nice touch for added color and flavor. You won't be disappointed with this dish if you like California rolls!
