Cheesecake, Sour Cream Topped

When I make this my family cannot stop singing my praises. Not hard to make and great for the ego. NOTE: DO NOT overbeat when adding the eggs or your cheesecake will have cracks in it. I've heard that is because too much air is beat into the batter and causes cracks. If you don't care about the cracks (I mean the topping covers them up anyway) don't worry about it.

Key Lime Rum Cake

Wonderful stuff. Very rich, though and I cut it into smaller servings. Also, I only baked it for an hour before I tested it. 90 minutes seemed a bit long to me. Maybe the author of the original recipe wanted a thicker crust.
