Cream Cheese Jalapeno Hamburgers

Wowee! This was great. My boo loves spice, so I added some chopped canned jalapenos to the beef along with garlic powder, S&P, and then used Philadelphia Cream Cheese brand Jalapeno cream cheese in the middle. I admit to having the "ooze" problem the first couple (more like a sandwich), but figured it out by the time I got to the 10th burger. Definitely a keeper! Thanks for the recipe.

Mediterranean Beef Meatball Kabob

I used 80/20 meat and the whole eggs, and added a quarter cup of Sriracha sauce and some chili flakes (we like it spicy). Made a long hot-dog shaped meatball on skewers to put it in lavash and pita with Greek Tzatziki and Authentic Taboulleh - it was the hit of the party! This one is definitely a keeper! If you barbecue it, make sure you oil your grate really thoroughly so that it doesn't stick.

Authentic Tabbouleh

I used half a red onion as I didn't have yellow or green, and I forgot to get mint! Doh. Anyway, it was AMAZING nonetheless and yes, Sharita is right, the tomato paste really makes the dressing. Even my non-parsley-loving friends liked it. Had it with Mediterranean Beef Meatball Kabob and Greek Tzatziki wrapped in lavash and pita breads. A big hit!

Greek Tzatziki

I made this as is except for the salt - I took JOHNN11102's advice and only added about half a teaspoon. I got RAVE reviews on this one - I had this with "Beef. It's What's for Dinner's" Mediterranean Beef Meatball Kabob and "araxjan's" Authentic Tabbouleh on lavash bread and pizza at a barbecue. It's a compliment when people ask for the recipe so I point them to this site!

Spicy Rice Noodle Salad

Wowee, was I popular at the barbecue on Sunday! I made this great salad - it's sooooo easy and delicious! I made as is but for one thing: I substituted diced green peppers for the green onions as my Boo hates onions, but I put them on the side with some extra crushed peanuts so that people could add garnish to their own salads. This one is definitely a keeper. (BTW, Trader Joe's has pre-shredded carrots which makes it even EASIER!).

Asian Glazed Chicken Thighs

This recipe was fantastic! I made as written except left out the sauce as it was salty enough. I marinaded chicken legs and then put it on the barbecue with more sauce. It kind of caramelized the skin of the chicken and kept the rest of the chicken juicy. I got many compliments on this one and will definitely keep it in my repertoire!

Garden Fresh Tomato Soup

I left out the roux and added a potato for thickness (am trying to cut down on dairy and wheat) and left out the sugar as it didn't need it, and it was delicious! I made it for my boo and then froze the rest and gave some to my mother who loved it too.

Tofu Peanut Stir-Fry

I took Darter02's advice and used Best Thai Peanut Sauce (which was AWESOME!), used fresh veggies (green and red bell peppers, snow peas), and just fried the tofu in peanut oil rather than egg batter it. It was pretty darn good!

The Best Thai Peanut Sauce

I followed this receipt exactly how it was written and then added it to a fried tofu Thai dish I made. My guinea pig (boyfriend), who has traveled extensively in Thailand, said it was the best peanut sauce he's had stateside. Oh, and it's even better the next day!

White Bean Chicken Breast Chili

I was making this for a friend and her kid so downplayed the chili - I only put one TBSP of chili powder - plus everyone is gluten and dairy free these days, so didn't use the flour or anything like that. I added tomatoes with jalapenos per other chefs' suggestions, and it was fantastic. I served it with Trader Joe's tomato-less salsa (sweet corn), cilantro, and green onions. (The next day, I put some in ramekins, and cracked an egg on top and served it for brunch. Yum!)

Basic Quiche by Shelly

I always like to try recipes as written and then tweak it according to feedback. This was the BEST quiche recipe I've ever tried and I'm "known for my quiche." However, it's not terribly slimming, which is a problem, because it's so delicious, I always end up eating more than I should!

Artichoke Dip I

I made this recipe as written though did use reduced fat mozzarella. It was delicious! It got rave reviews, particularly because you could actually see and taste the artichoke hearts. I served it with pita crackers and herb mini-toasts (I prefer the pita crackers). Thanks, MOIE, for the great recipe!

Slow Cooker Pulled Pork

I followed the recipe almost exactly but used pork shoulder per others' suggestions. It was laborious removing the fat BUT so worth it! I used Trader Joe's barbecue sauce and my boyfriend said this was the best pulled pork he'd ever had and the best thing I'd ever made. Now I have something to live up to!

Shrimp Scampi V

I followed the recipe and the only change I made was I had multi-grain angel hair instead of regular. It was fantastic. Nice and simple, and got rave reviews from my dinner guests. Had a nice dry Sauvignon Blanc with it and served with a light green salad. Yum.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I did everything except the grapes (as the ones in the store were horrible) and it was exceptional. We practically licked the plate clean! Colcannon Bake

I didn't have time to bake it, so did everything but the cheese (plus I'm trying to watch my girlish figure!) and it was a huge hit! Filet Mignon with Mushroom-Cabernet Gravy

I tried this last night for Valentine's Day dinner and kept to the recipe (though I may have added to the 1 cup splash or two of wine!). It was absolutely delicious and both of us were over the moon! I served it with garlic mashed potatoes and steamed asparagus, washed down with a nice cabernet. Thank you Muffinmom for such a great recipe!

Steak Salad

I always like to try a recipe as is the first time, but my boo doesn't like blue cheese (say what?) so I substituted it for feta. Couldn't find the pimento stuffed olives, so substituted mixed greek. Otherwise, everything was as is, and got 4 thumbs up (from both of us, that is - he doesn't have 4 hands!).
