Slow Cooker Latin Chicken

This was super tasty! I didn't have any sweet potatoes so just left them out. On day 1, I served it over yellow rice. On day 2, the juice was a bit thicker so I served it as filling for soft tortillas w/ cheddar cheese. Will definitely make again.

Chicken Enchiladas Suizas

I totally enjoyed this recipe! I cut it in half since my kids don't eat ANYTHING! It was nice and moist inside. I didn't make the white sauce bec I didn't have whipping cream. Instead I added a bit of salsa w/ cheese to top before baking. My husband and I like things a bit more spicey than this so I'll prob add another chipotle pepper and/or jalapeno next time. You should definitely try this!

Ann's Sister's Meatloaf Recipe

This is classic meatloaf! I mix the 2 lbs of meat, divide it in half and freeze one for later. If you like the crusty outside, shape meat into several "armadillos" and the cook time will be shortened a bit. I also skip the MSG.

Roast Sticky Chicken-Rotisserie Style

I only give this 3 stars bec for the amount of time you have to wait for it, it was only ok -- moist, yes, only slightly flavorful. I cooked them in a glass roasting pan and it filled with liquid to the very top! I switched pans and continued cooking, saving the juices for a tasty gravy. Also, why is it called "sticky" chicken? I don't think I'll bother making this again.

Roasted Vegetables

I threw this together one day with whatever veg I had on hand (white potato, sweet potato, garlic, carrots, peppers and onion)and it turned out great. One thing I learned, roast hearty veg first and add peppers and onions halfway thru. Husband asked for it again.

Catherine's Spicy Chicken Soup

I scaled the recipe in half, simmered the carcass of a rotisserie chicken for the meat & broth, sauteed garlic, onion & celery before adding 14.5 oz can tomatoes w/ gr chilies and 15 oz can black beans, cup salsa and box froz mixed veg (bec didn't have just corn), 5 cups of broth, 1 T chili powder, 1 t chipotle chili powder, 1/4 t ground red pepper. I thought it was a bit watery so I took the cover off and simmered for an extra 20 mins until a bit thicker. Delicious!

Slow Cooker Roast Beef

I enjoyed this meal and will definitely make it again. I had 2 unexpected dinner guests who requested seconds and thirds! I added mushrooms, carrots and potatoes about 2 hours before serving and some flour to thicken the gravy just before serving.
