I scaled the recipe in half, simmered the carcass of a rotisserie chicken for the meat & broth, sauteed garlic, onion & celery before adding 14.5 oz can tomatoes w/ gr chilies and 15 oz can black beans, cup salsa and box froz mixed veg (bec didn't have just corn), 5 cups of broth, 1 T chili powder, 1 t chipotle chili powder, 1/4 t ground red pepper. I thought it was a bit watery so I took the cover off and simmered for an extra 20 mins until a bit thicker. Delicious!
