French Toast Casserole
4.5 for ease of preparation and simple ingredients. I used toasted cubes that were earmarked for bread crumbs, so it was a little crunchier. The video says to gently turn the bread in the liquid (eggs/milk) mix, but I decided to mix the bread cubes in the liquid mixing bowl, first, before pouring into the buttered casserole. Also, since the mix is supposed to soak into the bread for 10 minutes, I wouldn't turn on the oven at the start of prep, since it only takes 5 minutes to reach 350°. Great tasting and smelling!

Rich and Creamy Tomato Basil Soup
Made garlic naan with this soup - delish! I bought Target's tomato juice and used fresh ground pepper and sea salt. If you don't have an immersion blender, then ladle into a blender. You'll have to double the recipe, because it will be lapped up in no time! I generously poured the cream, and used the full stick of butter, and didn't find it too rich. The kick comes from the basil, which in my case, was fresh picked and quite minty. It is just tart enough to remind you it has a load of vitamin C, but still be enjoyable. BTW - don't follow the advice of the reviewers who put the entire tomato without removing the seeds, unless you like chewing through seed pieces in every spoonful.

Pecan Pie V
I'll have to try this again, but only because of all the other positive reviews. I took the advice of baking at 300 for 45 mins., but the filling was too runny. Turned it 350 for 10 more minutes, but the filling was still molasses-like. Makes me wonder if I should add more flour to thicken the sugary mix. Will post again in a few weeks before trying again.- Becky
