Caramel Snack Mix

We love this sweet mix any time of the year. We skip the nuts and throw in a couple more cups of cereal. And we've tried using Chex, but Crispex is just MADE for this recipe, it works perfect. The stirring at the end is crucial so it won't be in a blob. It's a great sweet to have at the holidays that's not a cookie or fudge.

Buffalo Chicken Dipping Balls

Mixed these up and let them sit overnight. We made half the recipe, and I did add a couple heaping tablespoons of cream cheese to the mix. We used panko crumbs for an extra crunch. And I used a fry pan with oil, not a deep fryer. They were awesome! I thought the sharp cheddar made them a bit 'saltier' but still awesome. We might try making patties and doing a sandwich sometime. This one is perfect if you love the hot buffalo flavor like we do.

Kimberly's Meaty Meatloaf

My hubby recently used this recipe the first time he ever made meatloaf. It was better than ANY I (or my mom) ever made! Gosh, was was so good! He took 1/2 of the tomato sauce & mixed that into the recipe. (I am not a fan of the tomato stuff on top, but this didn't have a gob and it was good!) He used 1 lb lean beef and 1 lb ground pork. Plus he used more 'chester sauce- 2 T. We are keeping this one and will be sharing the recipe!

Dill Potato Salad

Good stuff-added a little more dill and since we like a creamier tater salad, added in more sour cream. Also sprinkled in some garlic salt.

Strawberry Cake from Scratch

I am so glad I read the reviews-this turned out great with some tweaking! Here's what I did different from the original: * sifted cake flour, then measured out * separated yolk/white and beat whites to soft peaks, then folded in at the end * reduced sugar to 1 3/4 c.(will try 1.5 c. next time) * baked in three, 9 in. pans * frosting=two store bought vanillas and 1/3 c. puree (plus a little red food color) Cake was dense, moist and great! I liberally coated/greased/floured the pans, put wax paper on bottom, too. I really want to try this with raspberries as a local baker that is now out of business had the best raspberry cake and frosting. This turned out great! Thanks!

Cashew Chicken II

This was a great cashew chicken! I've never been able to make a sauce on a chinese chicken dish that I liked. I pretty much cut the recipe in half since there is only two of us-used one can of chicken broth and a whole can of water chestnuts. I included some larger slices of onion like you get at the restaurants-I let those simmer/cook in the sauce until soft. Plus, I used Tamari sauce instead of soy. The flavor was wonderful! Will keep this recipe handy!

Annie's Fruit Salsa and Cinnamon Chips

This is such a fantastic treat and something different! First batch we made with 2 kiwi, 1 peach, raspberries, a granny smith and a 'grapple' (it's an apple, but smells & tastes like a white grape!) & cherry preserves. Second batch was with rasperries, strawberries, 1/2 a fugi and 1/2 a granny smith, 2 kiwi and 1 peach. You never have to have the same taste twice unless you want and it's fun to experiment. The chips were super, as I think the 2nd spray of Pam kept the cinn./sugar on. I wanted to take something light to a 4th of July gathering and this was a hit! Will make this a lot! Thanks for sharing!

Buffalo Chicken Dip

This is fantastic! We used light cream cheese, lite ranch dressing, too. Used Cookie's brand wing sauce (our fave) instead of Frank's. Warmed it all on the stove top and bypassed the crock pot. Warmed up leftovers are good, too. Ate it with Triscuits and Chicken in a Biscuit crackers. We'll make it OFTEN!!

Rhubarb Cherry Crisp

Very yummy stuff! I omitted the nuts to please the family, but I don't think they were missed. I made two batches at once (we have a rhubarb patch) so everyone at work could try it-they loved it too! The cherries made a nice addition to the rhubarb.
