Baked Spaghetti

I may be in the minority here but I think this dish could use quite a bit less cheese. I still gave it 5 stars because it is delicious, just next time I make it I will probably cut the mozzarella by at least half. Great comfort food!

Homemade Black Bean Veggie Burgers

These are very very good! I followed the recipe almost exactly except I probably used more breadcrumbs than called for (I didn't measure, just mixed them in until I liked the consistency. I baked a few and fried a couple in a small amount of canola oil so I could decide which way I preferred. I really couldn't decide between the fried and the baked, they were both excellent so in the future I will probably bake to keep them as healthy as possible. I didn't eat them as burgers but made a small salad with lettuce, tomato, and avocado and added a little dressing and put the patty on top with some cheese. An excellent light but filling dinner! I gave it 4 stars only because I would have preferred a little more kick and a little less cumin.

Grandma Elaine's Unstuffed Sweet and Sour Cabbage

I thought that this was an excellent recipe and loved the blend of flavors. I left out the raisins because we don't like them but it was still excellent. Also because I don't have time or patience to make meatballs, I used prepared frozen meatballs so the recipe came together in a snap. We served it over brown rice.

Exquisite Pizza Sauce

I found this sauce to be completely inedible. Not only is it WAY too sweet, the honey in no way complements the other flavors. Perhaps another sweetener would have resulted in something I could eat, but I won't be revisiting this recipe to find out.

Wheat Crackers

These are delish with a capital D! Following the advice of some other reviews, I increased the salt to 1t. I also added 1t. of a spice mix called "Sandwich Sprinkle" that I buy from Penzey's Spices. I have a feeling that any of your favorite spices or flavors would be really good. I also put a little sprinkle of salt on top, mostly for appearance and texture. I increased the temperature to 400 degrees and they were really good and crispy after 15 minutes. These are SO EASY and fast! Oh, and I used my pasta machine to roll them out which made it so simple. They weren't perfectly uniform but I don't mind. YUM!

Barbie's Tuna Salad

This was pretty good but not amazing. I love curry so I had to give it a try. I'm not sure the parmesan cheese added anything, don't think I would put that in next time. Kind of a strange ingredient with everything else.

Six Can Chicken Tortilla Soup

I can not believe how good this soup is! It is awesome! I added a little bit of crushed red pepper because I like a little heat. I served it with tortilla chips, sour cream, avocado slices, and a squirt of lime. Yum!

Refried Beans Without the Refry

These are excellent! So much healthier than what you would get from a can or in a restaurant! I waited to add the salt until they were cooked so I could taste and adjust. I also used about 4 cups of chicken broth in combination with the water to add a bit more flavor.

Braised Balsamic Chicken

This is delicious! I used a whole cut up chicken since that is what I had on hand. I simmered it very gently for about an hour, maybe an hour and a half. I think the key to this recipe is to use a really good balsamic vinegar. The tomatoes were sweet and delicious! I took the chicken from the bone when it was finished and served it over rice. So easy and wonderful!

Broccoli Cheese Soup

This is a delicious soup. . .I subtracted 1 star for all of the cornstarch, I wanted soup, not pudding! I used just 2 Tbsp. of cornstarch to thicken very slightly. It turned out great!

Tzatziki Sauce I

This is wonderful and really reminded my husband and I of all the wonderful tzatziki we ate in Greece on our honeymoon. I agree with other reviewers, though, it is just not tzatziki without cucumber! I added about a cup of crated english cucumber. Delicious!

Chocolate Chip Banana Muffins

MM MM Delish! These are SOO good! I added 1/2 t. cinnamon, besides that followed the recipe exactly. My two year old helped me and then gobbled one up right out of the oven.

Tofu Chocolate Pudding

This was just OK. I was disappointed after reading all of the rave reviews. You could totally taste the tofu. I made it for my two year old, though, because she is so picky and I am trying to figure out how to get more protein in her. She loved it so I guess I would say give it a try if you have a picky toddler. Other than that I wouldn't serve it. I did add two packets of splenda to sweeten it up a little bit.

Grandma VanDoren's White Bread

If I could give this recipe 10 stars I would! The bread was delicious and so easy! I made two loaves of bread and about 10 bread rolls. The rolls made delicious sandwiches, they were wonderful! The bread has a delicate crust and a wonderful crumb. Highly recommended!

Peppy's Pita Bread

This is a solid recipe but I recommend after rolling out the pitas to place them on the racks you will be baking them on to allow them to puff slightly, that way you won't have to handle them again before you put them in the oven. I made the mistake of leaving them on the counter and when I moved them to the racks for baking they deflated and were pretty much ruined. They tasted good but did not puff up in the oven and looked really weird. It is not the recipes' fault though, it was mine!

Greek Chicken Pasta

This is delicious! I do recommend adding a little of the cooking water from the pasta to prevent the pasta from drying too much. The feta melts and makes a wonderful coating for the pasta and vegetables. Yum!
