Lemon Poppy Seed Bread

Since my son fell in love with the lemon poppy seed bread at Caribou, I have wanted to find a recipe to make at home to satisfy his taste for it. This bread definitely fits the bill. I've only made it once and I made it exactly as the recipe states. It gets a big ol' thumbs up from my son and myself. The only thing I'm not a huge fan of is the glaze as it is in the recipe. (The glaze is the only reason I didn't give it 5 stars). I'll probably experiment with other glazes next time I make it. But the bread itself is great and has just the right amount of lemon flavor for our palettes. As for quantity, I made the amount of batter that came up for the recipe but made one loaf and 12 muffins with it instead of the 3 loaves. Seemed to come out just right. The muffins were ready after about 35 minutes and the loaf took the whole 55 minutes.

Peanut Butter Cup Cookies

My husband loves peanut butter cups and anything that combines pb and chocolate. These are his absolute favorite cookie now. They will be a staple in my own cookie recipes from now on.

Fish Fry Bake

My whole family actually rates this pretty high with the changes that I made. I first baked just the fish sticks at the temp on the box for about half the time the box calls for. This allows them to crisp up a bit before adding the soup. Then I poured over the soup mixture. We used cream of mushroom and Nature's Seasons instead just because of taste preference. Then on top of the soup I put tator tots instead of french fries. Then some shredded cheddar on top of that. Baked the whole thing at 400 for 25 minutes. Came out really good and the tator tots stayed crisp being on top. The whole thing is still a casserole consistency but not overly soupy at all the way I made it.

Iowa Pork Steak

First try on this recipe came out very good. Can't wait to try it again. I made some slight modifications just because of availability of ingredients: didn't have onion powder so used paprika instead, used chives instead of onions, used cream of chicken instead of cream of mushroom, and skipped the mushrooms over the top. Next time I want to add the mushrooms, fresh ones. I also think any reasonable 'cream of' soup would work well (mushroom, chicken, celery, etc). I put rice on the side this time, which was good, but I think next time I'll do mashed potatoes because the sauce that it ends up making sounds perfect for mashed potatoes. Despite my slight adjustments for what was in my cupboard, I think this recipe would be great as is, or with your own personal adjustments.

Sesame Beef Stir-Fry

Very yummy! Made it just how described in the recipe and I wouldn't change a thing... ok, maybe one thing. We left out the water chestnuts just because neither my husband nor I like them. But everything else was just like in the recipe and we love, love, love it!

Best One Pot Cheese and Macaroni

Eh, it was decent. I made it pretty much as called for in the recipe. It made for a good comfort food but nothing to write home about. Almost too cheesy for my taste and I normally love lots of cheese.

Grilled Brown Sugar Pork Chops

Really good, really easy recipe. I recommend it to anyone, especially if you like a little sweet flavor. The only modification I made is I used olive oil instead of vegetable oil - otherwise made it just as stated.

Asparagus and Mozzarella Stuffed Chicken Breasts

A very yummy recipe, especially if you like asparagus. I personally am not a huge fan of asparagus, but in a dish like this I eat it. My husband absolutely loves it. The only tip I will give in regards to preparation is that it is messy. Handling the chicken breasts and wrapping them around the asparagus and cheese... if you don't like really messy hands, wear gloves. But either way it's worth it.
