Lemon Poppy Seed Bread
Since my son fell in love with the lemon poppy seed bread at Caribou, I have wanted to find a recipe to make at home to satisfy his taste for it. This bread definitely fits the bill. I've only made it once and I made it exactly as the recipe states. It gets a big ol' thumbs up from my son and myself. The only thing I'm not a huge fan of is the glaze as it is in the recipe. (The glaze is the only reason I didn't give it 5 stars). I'll probably experiment with other glazes next time I make it. But the bread itself is great and has just the right amount of lemon flavor for our palettes. As for quantity, I made the amount of batter that came up for the recipe but made one loaf and 12 muffins with it instead of the 3 loaves. Seemed to come out just right. The muffins were ready after about 35 minutes and the loaf took the whole 55 minutes.

Peanut Butter Cup Cookies
My husband loves peanut butter cups and anything that combines pb and chocolate. These are his absolute favorite cookie now. They will be a staple in my own cookie recipes from now on.

Fish Fry Bake
My whole family actually rates this pretty high with the changes that I made. I first baked just the fish sticks at the temp on the box for about half the time the box calls for. This allows them to crisp up a bit before adding the soup. Then I poured over the soup mixture. We used cream of mushroom and Nature's Seasons instead just because of taste preference. Then on top of the soup I put tator tots instead of french fries. Then some shredded cheddar on top of that. Baked the whole thing at 400 for 25 minutes. Came out really good and the tator tots stayed crisp being on top. The whole thing is still a casserole consistency but not overly soupy at all the way I made it.
