Flank Steak Pinwheels
Made this with my always hungry teenage son. Used gluten free Italian bread crumbs so celiacs could eat it. It was absolutely delicious. I showed the butcher the recipe on my phone, and He sliced dhe flank steak into two very thin layers and I believe he put it through a tenderizer. He showed me to lay the two pieces end to end overlapping a bit so we could roll from the bottom layer. We marinaded it in a ziplock rolled up like he said so that we could just unroll it the next day on the pan. He gave us some twine. Fun easy cooking project. We used more spinach than advised and goat feta. Soooooooo good. Not a crumb left. I wish I could eat it again now!

Florentine Pasta Salad
My family really did not like this recipe at all. The teriyaki sauce was just too overpowering and sweet.

Wild Rice Casserole II
Doubled the recipe but not the butter and salt. Used the butter in the oven dish, but sautéed onions and mushrooms in olive oil. Timing for me was exactly as stated. 30 min before the veggies are added and 30 min after. Served with a turkey breast. Skipped the chestnuts since I didn't have them. Used Lundberg Wild Rice Blend. Everyone loved it. Never had made rice in the oven before. Was great to be able to just stick it in there for the last hour turkey was baking. Was ready before turkey but was fine sitting out covered for a while. Easy, moist and delicious!
