Shrimp and Asparagus

Quick and easy recipe, a little bland before adding extra seasoning but I forgot the lemon juice so that probably didn't help. I added Lawry's to the mix, more black pepper and only used 2 tbs butter together with a little olive oil. 1 cup butter was just too much for me to handle! As I didn't have much shrimp, I used fake crab too, which added nicely to the meal. I would've used some white wine if I had some open but unfortunately I didn't. Will make again (with the white wine!)

Easy OREO Truffles

Made them for Superbowl. Everyone loves them and they are so easy. Remember to put them in the fridge after mixing them and for several hours after putting the chocolate on them. Used a plastic fork with middle two prongs broken off to dip in the chocolate. Also, keep the oreos whole, no need to scrape off the filling!

Shrimp Couscous Salad

Great, quick recipe! I didn't have all the ingredients (no peppers) so made do with what I had (green onions, bit of corn, black olives). I used a flavored packet of couscous and added it to the dressing. I wouldn't use all the cumin, as it was a bit overpowering (and I only used 1/2 a cup of oil which still gave too much dressing) but aside from that it was fantastic! Even the hubby thought it was wonderful and completely different from our normal shrimp dishes. Will definitely make again!

Italian Sausage Soup with Tortellini

Loved it! Even hubby loved it and he's not a soup guy. Followed other reviewers suggestions and used 6 cups of broth - 4 beef (low sodium) and 2 chicken. It definitely needs the extra liquid. Used two cans of undrained diced tomatoes instead of fresh, purely for convenience's sake (omitted the extra water but next time probably won't). Otherwise followed the recipe as is and served with crunchy bread and a bit of parmesan cheese. Already ladled out hubby's lunch for tomorrow and looking forward to mine too as there's loads left!

White Chocolate Raspberry Cheesecake

I made this for a Christmas party and had a request to make it again for Christmas Eve! I used the raspberry seedless jam, and heated the chocolate chips in the microwave- both worked great. I did put out the eggs and cream cheese to warm to room temperature before I started. I left the cheesecake in the closed oven to cool but it still cracked where the jam was (I used a water bath the first time but it didn't make any difference). This didn't matter as the jam topping and fresh raspberries coated it just fine! I will definitely make it again - but only when I have a good 5 hours for it to cool!

Tilapia Soft Tacos with Chipotle Cream

This was fantastic! I wasn't expecting it to be so tasty, nor did I expect the combination of spices to turn out so great! Loved the chipotle sour cream dip - make sure you only use two out of the whole can! Used pre-made cabbage instead of greens and had black beans and rice on the side. Husband loved it, will definitely make again!

Mrs. Sigg's Fresh Pumpkin Pie

Made this twice in a week. First time didn't have evap. milk so used half and half. Very runny, took much longer to cook but still good. Second one used evap. milk - so good! Already had 3 requests to make it for Thanskgiving!

Easy recipe! Only changed the recipe by adding 1/2 tsp sugar and a tsp of garlic powder. Came out nice and fluffy, with a great flavor. Will definitely make again.

Beef Stroganoff III

Great base recipe but I adjusted it quite a bit with other raters suggestions. Used half a sweet onion, one crushed garlic clove, added sherry cooking wine after browning these and the beef. Used one can condensed beef stock (with one can water), added Worcestershire sauce, used fresh mushrooms and made it a one pot recipe by adding the egg noodles to the sauce and simmering until done. Great flavor, quick and easy - I will definitely make again!

Great! Used sweetened coconut but the marmalade dip worked well to cut down the sweetness. (Don't make the oil too hot or they will burn!) Will definitely make again.

Roasted Salmon with Orange-Ginger Glaze

Best recipe I've tried in a while. Followed other reviewer's suggestions and added 1 tsp honey and 1tbsp soy sauce. Also thickened the sauce with some cornstarch at the end. Served with jasmine rice and steamed broccoli. Easy and tastes fantastic - will definitely make again!

Pineapple Grilled Pork Chops

Quick, easy, and tasty (even my 3 year old loved it!). Only had time to marinade for two hours but you could still taste the soy/pineapple flavor. Served with quinoa and steamed green beans. Will definitely make again.

Brownie Caramel Cheesecake

Time consuming but worth it. Used a 10.5 brownie mix and used 2 eggs (called for 1). Baked for 15 minutes as it wasn't cooked through earlier. Placed pecans on top of the brownie mix before pouring on the caramel, which stopped any seepage. Followed the 3 packs cream cheese etc. recipe from a previous reviewer and the filling turned out great. Baked for an hour and left in the closed oven for over 2. Chilled for 4-5 hours. Got great reviews from guests but make sure you have plenty of time to make, it takes a while!

Chocolate Cupcakes

Added an extra couple of tbsp of butter as it wouldn't cream with just 3. They did exactly what the bad reviews said, puffed up and then sank in the middle. They turned out more like cakey brownies instead of cupcakes and there's no way I would waste time icing them. Will not make again.

Boilermaker Tailgate Chili

Great recipe! Took a while to prep but worth it. Only modifications were to decrease the tabasco to 1tsp and didn't add the chilis. Also halved the chili powder but that's only because hubby can't stand the heat! Made it on Saturday afternoon, cooked for 3 hours, chilled over night and crock-pot-cooked it for 6 hours on Sunday. From tasting it Saturday night, it definitely improved by Sunday. Topped with sour cream and cheese - awesome!

Red Velvet Cake I

I followed other people's substitution suggestions and also used chocolate chips instead of cocoa powder as I didn't have any. Cake sunk in the middle (my fault, I'm sure, from over mixing). Used the frosting recipe, thought it had curdled but read other reviews saying you need to mix for nearly 10 minutes. Kept mixing and it came out great! Just tried the cake - it's not dry, actually quite moist and the icing is wonderful. This was my first ever Kitchen Aid Mixer recipe so will try again and try to avoid the sinking!!

Downeast Maine Pumpkin Bread

Loved this recipe - so easy and great results! Only had 3 eggs so substituted one small banana, used half white, half brown sugar and added a tsp of vanilla essence. Added chocolate chips to muffins but preferred the plain bread (with a cream cheese spread!)
