Sweet Hot Mustard Chicken Thighs

Reviewed: Jul. 8, 2014
So tasty! Quick and easy to put together. Only had 1/4 cup mustard so adjusted the recipe. Also didn't have chipotle so left it without. Didn't have any foil so that will make for tough clean up but well worth it. Will definitely make again.

Pineapple Grilled Pork Chops

Reviewed: Jul. 8, 2014
Quick, easy, and tasty (even my 3 year old loved it!). Only had time to marinade for two hours but you could still taste the soy/pineapple flavor. Served with quinoa and steamed green beans. Will definitely make again.

Basic Pasta

Great, tasty and easy! Doubled the recipe but only used 3/4 tsp salt and added a tbsp of olive oil. Will definitely make again.

Brownie Caramel Cheesecake

Reviewed: Aug. 11, 2013
Time consuming but worth it. Used a 10.5 brownie mix and used 2 eggs (called for 1). Baked for 15 minutes as it wasn't cooked through earlier. Placed pecans on top of the brownie mix before pouring on the caramel, which stopped any seepage. Followed the 3 packs cream cheese etc. recipe from a previous reviewer and the filling turned out great. Baked for an hour and left in the closed oven for over 2. Chilled for 4-5 hours. Got great reviews from guests but make sure you have plenty of time to make, it takes a while!

Coconut Shrimp I

Reviewed: Aug. 11, 2013
Great! Used sweetened coconut but the marmalade dip worked well to cut down the sweetness. (Don't make the oil too hot or they will burn!) Will definitely make again.

Chocolate Cupcakes

Reviewed: Jun. 7, 2013
Added an extra couple of tbsp of butter as it wouldn't cream with just 3. They did exactly what the bad reviews said, puffed up and then sank in the middle. They turned out more like cakey brownies instead of cupcakes and there's no way I would waste time icing them. Will not make again.

Barbecued Shrimp

Reviewed: Feb. 19, 2013
Cut the recipe down for 1lb frozen bag of shrimp. 1/4 cup Worcestershire, 1 lemon, 3 garlic cloves and everything else just added to flavor as we like it (not very spicy people!). I definitely cut down on the oil and butter too. Peeled the shrimp and allowed to marinate for 1.5 hours and cooked on the stove. Served with fettucini and salad. I really liked the flavor but it was too lemony for my husband. Quick and easy, will do again, (next time with less lemon)!

Pesto Chicken Florentine

Reviewed: Feb. 5, 2013
Really liked this; quick, easy and tasty. I used leftover rotisserie chicken, which sped up the whole process. Hubby even liked it, and for a packet meal, that's saying something! Served with garlic bread.

Boilermaker Tailgate Chili

Reviewed: Feb. 5, 2013
Great recipe! Took a while to prep but worth it. Only modifications were to decrease the tabasco to 1tsp and didn't add the chilis. Also halved the chili powder but that's only because hubby can't stand the heat! Made it on Saturday afternoon, cooked for 3 hours, chilled over night and crock-pot-cooked it for 6 hours on Sunday. From tasting it Saturday night, it definitely improved by Sunday. Topped with sour cream and cheese - awesome!

Basic Crepes

Reviewed: Feb. 1, 2013
Accidentally doubled the milk so omitted the water but they still turned out great! Mixed all wet ingredients together then slowly added to dry. Quick, easy and delicious; I'll be making again!

Marinated Scallops Wrapped in Bacon

Reviewed: Oct. 3, 2012
Really quick and easy. Cooked the bacon for 15 minutes beforehand, it was perfect. Also, only marinated for 30 minutes or so. Will definitely make again!

Pretty good! Followed the recipe as is but added more garlic powder and seasonings (oregano, basil). Will definitely make again for a quick weeknight meal.

Balsamic Roasted Pork Loin

Reviewed: May 30, 2012
Absolutely fantastic, we loved it! Had to make some slight alterations due to ingredients on hand. Used 1/4 cup balsamic vinegar and 1/4 cup red wine vinegar. Added some white wine to sweeten (can't use honey) and used my own steak seasoning. Also added 2 cloves of crushed garlic as suggested by previous reviewer. Will definitely make again, would even do so for company. Marinated for 8 hours.

Great, loved it! Didn't add as much cream and added a lot more spinach but it was fantastic! Was really quick and easy too. Will definitely make again.

Thai Chicken with Basil Stir Fry

Reviewed: Mar. 27, 2012
Really liked this recipe - made as is, aside from had to substitute ginger powder for fresh as I didn't have any. Husband went back for seconds :) Will make again.

Italian Sausage Soup with Tortellini

Reviewed: Feb. 19, 2012
Loved it! Even hubby loved it and he's not a soup guy. Followed other reviewers suggestions and used 6 cups of broth - 4 beef (low sodium) and 2 chicken. It definitely needs the extra liquid. Used two cans of undrained diced tomatoes instead of fresh, purely for convenience's sake (omitted the extra water but next time probably won't). Otherwise followed the recipe as is and served with crunchy bread and a bit of parmesan cheese. Already ladled out hubby's lunch for tomorrow and looking forward to mine too as there's loads left!

Marinated Flank Steak

Loved this recipe. Marinaded the steak overnight and it was fantastic. On second try, I added some leftover red wine and that gave it a different taste, but still great! Thanks!

Tilapia Soft Tacos with Chipotle Cream

Reviewed: Feb. 9, 2012
This was fantastic! I wasn't expecting it to be so tasty, nor did I expect the combination of spices to turn out so great! Loved the chipotle sour cream dip - make sure you only use two out of the whole can! Used pre-made cabbage instead of greens and had black beans and rice on the side. Husband loved it, will definitely make again!

Easy OREO Truffles

Reviewed: Feb. 6, 2012
Made them for Superbowl. Everyone loves them and they are so easy. Remember to put them in the fridge after mixing them and for several hours after putting the chocolate on them. Used a plastic fork with middle two prongs broken off to dip in the chocolate. Also, keep the oreos whole, no need to scrape off the filling!

Roasted Salmon with Orange-Ginger Glaze

Reviewed: Jan. 8, 2012
Best recipe I've tried in a while. Followed other reviewer's suggestions and added 1 tsp honey and 1tbsp soy sauce. Also thickened the sauce with some cornstarch at the end. Served with jasmine rice and steamed broccoli. Easy and tastes fantastic - will definitely make again!
