Quick and Easy Spanish Rice

Since I never use instant rice, I used regular rice (2 cups) and added some chicken broth and juice to compensate. I also used frozen chopped onion/green peppers instead of fresh. This is DELICIOUS. However, I will make a smaller amount next time using the liquid/rice ratio I always use for regular rice. My grandson devoured it and it is something that will be made over and over again.

Egg Sandwich

I spray butter spray on the dish to remove the egg easier. I also season the egg with s/p and hot sauce before cooking. I add jelly to the toast...and sometimes add the cheese..I have this for breakfast nearly every morning

Cheddar Bay Biscuits

My favmily LOVED these after I added the missing Old Bay seasoning. They cannot be Bay Biscuits with Old Bay. These have become a requested favorite with family and friends.

Stuffed Pepper Soup IV

Because I like a little more kick - I added minced garlic and worcestershire sauce to the meat when browning it. I added another green pepper because we love them. I also added a dash of hot sauce and some Italian seasoning. I added two cups of water and the rice directly to the soup - saved using another pan. MMMMM good

Lemon Pudding Cookies

Instead of greasing cookie sheets, use parchment paper...so much easier to clean up and bakes cookies perfectly. This is a great quick cookie recipe.

Dill Pickle Meatloaf

This was a huge hit at our house. My 10 year old grandson loved it. I did make a couple of changes - I added about 1/4 cup oats; I used dill pickle relish (drained) instead of chopping pickles, and I omitted the water called for in the glaze. I also added some garlic seasoning. This will definitely be a keeper.

Best Tuna Casserole

This is a terrific tuna casserole. Everyone wanted the recipe. I once substituted canned salmon for the tuna and it was very well received.

Southern Turnip Supreme

We loved this. I didn't have vegetable bouillon cube so used chicken instead. Vegetable was very tender and tasty and a different way to use tasty turnips. I would like to mash this with potatoes.
