The ingredients are similar to what I use which is good. Make your directions fit your ingredients. Otherwise, you're good to go.

NOW THIS IS CORNBREAD!!! This is just like the cornbread that my grandmother and mother used to make "using the seasoned black skillet". I did not use the baking soda and I used melted butter instead. Make it all the time. YEAH...NO SUGAR!!!

Fennel Corn Muffin

These are okay but to me a little dry and more of a "just" muffin instead of a corn muffin...not enough cornmeal. Used buttermilk instead of soy, 2 whole eggs and butter instead of vegetable oil. I'll have to experiment with this one...REALLY!

West African Chicken Stew

Having seen other recipes for African Chicken Stew, I would used different vegetables (such as sweet potatoes, turnips) and use vegetable broth instead of water. It would intensify the taste. All in all, the recipe is very good. I increased the garlic to 3 cloves minced, spinach to 3 cups and reduced the red pepper flakes in half.

Orange Date Pinwheel Cookies

These cookies are absolutely wonderful. This is a recipe that my mom used to make when we were children. I remember helping her make these cookies. I used finely chopped pecans, thus omitting having to use the food processor. I used 2 teaspoons of baking powder omitting the baking soda & reduced amount of salt to 1/4 teaspoon.
