Mexican Bean Salad

This was fantastic! The second time, I turned it into Asian Bean Salad!!! Instead of cannellini beans, I used Edamame (a favorite), added 1/4 tsp. of ground ginger instead of cumin, chopped celery leaves instead of cilantro, and rice wine instead of red wine vinegar.

Stuffed Green Peppers I

The first time I made this, I stuck to the recipe exactly, and the family loved it. The second time, I increased the rice (and water) to 3/4 cup, took the meat down to 1/2 pound, and added a small, finely diced, zucchini (so my family wouldn't notice). And? Everyone still loved it!! Got to hide in extra veggies and fiber when I can :D

Slow Cooker Macaroni and Cheese I

I followed this exactly as written, and it was GREAT! I grew up with oven-baked "custard" mac-n-cheese. I wish everyone liked this, but I'm one who dislikes "creamy" mac-n-cheese. If I want that, I just make something from the grocery store. THIS is homemade mac-n-cheese :)

Butternut Squash Risotto

Wow, this is so worth the time it takes to make! I was going to an autumn dinner party for several friends, and I doubled this recipe. To make it even more autumn-like, I 1) mashed the butternut squash, but left some very small chunks on purpose. Then, 2) when I added onion, I also sliced some leeks very thinly - just because I like them. Finally, at the end, I 3)threw in about 2 cups of thinly shredded baby spinach. It was gorgeous and BIG hit!

M's Sloppy Joe Sauce

Yummmm. I had to make it without green pepper, cause I have a picky husband, so had to add something to give it a little "kick" for myself. I chose 1/2 tsp of hot sauce, and it worked well!
