Greek Rice Salad

Reviewed: Jun. 25, 2010
This was excellent, and tasted very good the next day. Don't skip the mint, it adds something special. I served this as a main dish with extra feta, pepper, and salt on the side (there wasn't quite enough in the recipe, but this way everyone could pick their preferred amount), and it was a perfect light summer meal.

Strawberries with Balsamic Vinegar

Reviewed: Jun. 25, 2010
This worked well and I would make it again, though I would make a few changes next time. I only had brown sugar so I used that and it worked - I'm sure white is just as good. I let it sit for about two hours, which was plenty. I would have given it 5 stars, except I found that the strawberries without pepper on them tasted better. Though I'm glad I got to experience the flavor, I'd recommend trying it on one berry before going over the whole bowl). Also, before mixing I cut the berries in half as directed by the recipe, but I wish I'd sliced them more thinly for better presentation (they didn't slice as well after soaking).

Vegan Lentil, Kale, and Red Onion Pasta

Reviewed: Jun. 25, 2010
This was an excellent, crowd-pleasing dish! I was having a bunch of guests over and it was perfect - full of flavor (but not spicy) and sutiable for pretty much every dietary preference. I generally followed the recipe, with a few exceptions. I doubled it so it made 8 portions rather than 4, but it could have served 10 with no problem. Luckily, it keeps well and even tastes good cold, so the leftovers have been great. I didn't add vegan sausage and put in 2 roma tomatoes and 12 oz of mushrooms, as one user suggested. It worked well, definitely putting in 2 or 3 more tomatoes next time (if I'm doubling it again). And make sure to cook the pasta al dente. Maybe it was just because I had to wait before serving, but the pasta became a little mushy after everything was mixed together and sitting on the stove on low heat for a while. My guests all loved it and I'm definitely making it again!
