Sukhothai Pad Thai

This was delicious - although I did follow the comments from Bes which made it spectacular. The only thing I found a bit strange was that it never said how long to cook anything so it was a bit of a guessing game. Turned out great - my household agreed that it was the best pad thai we've ever had!

Mom's Buttermilk Pancakes

Classic Peanut Butter Cookies

These were pretty tasty! I just added a splash of vanilla extract but otherwise followed exactly. You really can't overcook these, even 1 minute longer and they're shot. I had to watch these so carefully but when I did, they turned out great!

Mom's Stovetop Pork Ribs

These always come out perfectly. We've been making these for a couple of years now and they're our go-to recipe for ribs. We made duck breast with this recipe and it was really good as well. We used cilantro, or neither parsley or cilantro depending on what we have. We will be growing parsley this year so I will be sure to make it that way as you said it is more traditional. Yum! Thanks for the recipe!

Margarita Grilled Shrimp

Quick and easy! I didn't have cilantro on hand so I omitted that, but when I have some in my garden again this summer I'll be making this plenty. I might add a little more tequila next time, I find I didn't really taste it.

Greek Lentil Soup (Fakes)

My significant other is Greek but his family recipe is a bit different (I leave that one for him to cook - I don't want to mess with it!). This one sounded really tasty so I tried it and now this is MY recipe for fakes :) I followed the recipe exactly, except all I had in my pantry were red lentils so I skipped the fist step. It turned out great. I think next time I might have to double the recipe because between two of us, we almost finished it all. The vinegar is absolutely necessary to add at the end, it really enhances the flavours. Thanks for the recipe Diana.

Cinnamon Belgian Waffles

Very tasty! I used about 1/3-1/2 whole wheat flour in place of the all-purpose, and we love cinnamon so I threw in more than just a pinch. It didn't make too many so it was perfect for just a couple of us, but if I'm entertaining I'll double next time!

Bean Soup With Kale

This is such a great recipe. I used a can of mixed beans and that was really good. I didn't have any fresh tomatoes but I did have some leftover stewed tomatoes that were spiced with cumin and some chilis so I threw that in and hoped for the best. It actually worked out really well. It's good with a bit of a kick! Add some noodles, and you have a sort of minestrone (at least that's what it reminded me of). This is a keeper!

Ukrainian Red Borscht Soup

I've never had borscht before so I decided to try this, and the result? YUM!! This is a forgiving recipe. I am not a fan of sausage so I omitted that... but I think I will try it next time anyway. According to other reviews, I halved the amount of cabbage, and instead of skipping the tomato paste all together I put in half. I don't have parsley so I used dill as was suggested by other reviewers, but I only had dry and it seemed to work just fine. What a hardy soup, and so healthy! For extra nutrients, I didn't even peel the veggies I just scrubbed them and cut off nasty bits... but let me tell you, it definitely doesn't take 15 minutes prep - shredding all the carrots and beets took forever!! Otherwise, this is fantastic and I will definitely be making this a whole lot.

Pumpkin Coconut Curry

This was really good. The reason I voted it a 3 star was just because I think it needed to be saucier and more coconutty. I think next time I might increase the coconut content by 50% or more and increase the overall liquid content. Another good addition might be chickpeas, but overall a very good recipe that will be added to our rotation. I didn't have chicken but I added bits of tofu and that worked very well. Very easy to make too which was a bonus. Yum!

I followed the recipe exactly, and it was far too salty. I was looking for a recipe that was not full of sugar and I will try it again just with half the amount of salt or less even. It was pretty crumbly, but I am guessing maybe it is supposed to be that way.

Baked Coconut Shrimp

These were so yummy! I like the idea of baking them, much healthier and I just don't have patience to fry things. I would take it out half way through and turn them over next time to get the other side crispier. I didn't have any cornstarch on hand so I actually used whole wheat flour and that worked just fine. I think 10 minutes is enough time, I think I cooked it for 12 minutes or something like that. Great recipe thanks!

Maple Corn Bread

I did modify the amount of cornmeal vs flour and had the teaspoons of baking powder heaping to compensate. I think these are wonderful.... I wonder what they'd taste like using buttermilk. I like the fact that there isn't too much oil in it and they are still moist.

Coconut Macaroons III

These were easy, quick and absolutely delicious. I followed it exactly as it was, which is rare. I think next time like some others mentioned I will try adding slivered almonds or and almond extract (maybe even amaretto) instead of vanilla. I think I just found a new go-to recipe

Pumpkin Wheat Honey Muffins

These were really tasty. I halved both the brown sugar and the honey, but next time I think I will cut out the brown sugar and keep the whole amount of honey so that it's not too sweet but keeps it moist. I like the fact that these muffins are whole wheat, I added wheat bran and flax as well. I followed other reviews and used 1 cup of pumpkin. I topped mine with pumpkin seeds and sprinkled cane sugar before baking and it was delicious!

No Bake Cookies V

The taste was great, but they didn't set properly. I added a handful of chocolate chips like my mom used to do in her recipe and added some wheat germ and coconut. I will have to keep trying!
