Apricot-Glazed Pork Chops

I give it 4.5 stars for taste and 5 stars for ease and quickness. You really can have dinner on the table in the time it takes to make rice. I used (no sugar added) apple juice. I cubed the pork first, fried it for a few minutes, removed from heat, and reduced the sauce for a few minutes (added about a tbs flour to thicken), then added back the pork for a few more minutes. Served it over rice with peas and baby carrots on the side. Just that easy. I'm eating leftovers for lunch right now; still good.

Ultimate Irresistible Granola

So good! I'll never buy granola again! Hubby and father who don't really care for granola even liked it. Added some salt, maple syrup, and brown sugar per other reviews, and then still sprinked a bit more brown sugar (to my taste) after the baking step. Also replaced the pecans with lightly salted peanuts because I had no pecans, and think this really added something because the bites without the peanuts were still good, but not as good. The salty & sweet combo was fantastic.

Todd's Famous Blueberry Pancakes

I tried other pancake recipes from this site and this is the best so far (even without the blueberries), and I think part this is due to the amount of baking powder, and there being no baking soda. These were very good as is, but excellent with the addition of 1/2 tsp vanilla and twice the amount of FRESH blueberries. Also was just as good with half white and half whole wheat flour.Oh, and you don't need to wait the hour; 15 min is fine. Thanks!

Spanish-Style Quinoa

You MUST try this recipe!! This was my first time making quinoa and it is fantastic! Fast and easy too. How good, you ask? I made it for dinner, we had leftovers for lunch twice that week, and I already made it again over the weekend! Doubling the spices is a must. And I followed others' suggestions of adding black beans and corn (also a bit crushed red pepper for some heat) and used whole wheat tortillas for burritos (makes 10-12 burritos). My husband, a huge meat eater, really likes them and doesn't miss the meat. They travel well (to work for lunch) and freeze well too. Perfect make ahead meal; make it once for dinner and have it for several times in the future. Thanks for the great recipe; definitely a keeper!!

Sausage Soup

This soup was excellent and only gets better the day after. I substituted Trader Joe's spicy Italian chicken sausage and wheat noodles to make it healthier, and it was great. I also followed others' suggestions of adding 1/4 tsp crushed red pepper, a bit more salt & pepper, and spinach instead of cabbage (added at the last 5 min). I also used two 32oz boxes of chicken broth and the extra liquid did not thin out the taste, but did give me more soup. This was so fast, so good, and I will definitely make it again. Thanks Behr!
