True Wisconsin Bloody Mary

As a Wisconsin bartender, I can attest that this recipe is quite authentic. In Madison, we often substitute a pickle for the celery garnish, and pickle brine in addition to the olive brine. Beer (especially a good stout) is a good addition, but I think beer is best served separately with the bloody as a chaser.

Greek Lentil Soup (Fakes)

Super easy, super healthy, super delicious. Everything a recipe should be! To reiterate what everyone else has said - the vinegar is key! I was a little disappointed with my first taste (pre-vinegar) so I put some red wine vinegar in and then proceeded to have two big bowls because I couldn't put the spoon down! This isn't just going to be revisited, this is going to be part of the regular rotation in my kitchen.

Lemon Lentil Salad

Great recipe. The dressing is perfect, although my lentils did not come out right. I noticed that the instructions for cooking the lentils on here are not the same as on the package, and I also read CyberGhetto's comment about rinsing in cold water to prevent mushiness... I will try both in the future because I will be making this recipe again. It was good even with mushy lentils, so you know it must be awesome when they're nice and firm!

Mock Chopped Liver

When I made this yesterday I tried it and thought "oh well, you can't really expect lentils and walnuts to taste like liver anyways". Oh, what a difference a day makes. After a night in the fridge the consistency and flavor are totally different, and absolutely wonderful! The texture is the only serious giveaway, as it's not quite as homogeneous and creamy as pate. I processed for a long time but some lentil husks just didn't get throughly ground so there's a little bit of a veggie/grainy texture from the fiber. If you can live with that, you will love this recipe. I made it exactly as the recipe directed, although I added a fair amount of kosher salt (2-3 tsp) and no pepper.

Spinach Pie

Wow. Exactly as advertised, this is a super easy home version of one of my greek restaurant favorites! I made mine with some diced chicken breast instead of poultry seasoning to make it more of a meal than a side. The only thing I thought this recipe fell short on was the topping. I was not a fan of the bread crumbs as a substitute for filo, although it was way easier. I think next time I might try puff pastry instead... kind of like a greek style chicken pot pie.

Heather's Cilantro, Black Bean, and Corn Salsa

Fantastic recipe as is! Sure, it's better if you use fresh corn cut right off the cob and freshly diced ripe tomatoes but the recipe is also delicious as written. I just recommend adding the step of leaving it in the fridge overnight before serving to let the flavors mix, and then adding the avocado right before serving. I like this stuff so much I eat with a spoon as a side dish!

Chiles Rellenos Pie

This recipe is a great unfried alternative that boasts a very similar taste to the popular dish. My only gripe is that I had a hard time finding the peppers are the bottom of the pie, and they should be the star of the dish! If/when I make this again I will use twice as many poblanos and 1/2 or at most 3/4 of the cheese, and repeat the layers twice like a lasagna. Still, the most important part of the dish - the flavor - was spot on and excellent.
