My Sister's Favorite Potato Salad...Ever

No celery salt, reduced mayo, added sour cream, chopped onion, chopped hard-boiled egg. Finally, a yummy potato salad I can enjoy that doesn't call for pickles! The dill flavor is sooooo good! Keeper, definitely.

Linguine with Clam Sauce

Took the suggestions and made this with olive oil instead of plain veg oil, more garlic, used red pepper flakes, the parmesan, and FRESH Italian parsley. Helloooo-was it ever yummy!!! Also, I added an extra can of chopped clams for more body, and only simmered the liquid from them with the other ingredients (mom's from WA, and it's sacrilege to over-cook seafood), then added the clams at the end just to heat them through. Had the leftovers for lunch next day!

Apple Dumplings II

Thanks for this one! Despite the pastry being a tad delicate to work with (I'll use my mom's pie crust recipe next time), it was just like what I had in Pennsylvania Dutch country years ago. Been searching for something close ever since. Keeping this one!!!

All-Day Apple Butter

Exceptional! So easy - didn't have to strain or sieve anything. And I used a food processor to finely chop, so that went really fast. Added some Penzey's cake spice, too, and extra of the rest. Wonderfully spiced and delicious! I also added about 1 cup of apple juice and 1/2 cup of apple cider vinegar, but that meant I needed to leave the lid off for around 1.5-2 hours, instead of just the 1 at the end. Oh, so good!

Scalloped Potatoes and Onions

Awesome recipe! Wouldn't have believed it could turn out so creamy without any milk! I mixed the main ingredients in a big bowl, then put them in the dish and poured the sauce over it all. I added a couple cloves of crushed garlic, some parsley, and parmesan. The biggest change was that I added about 8-10 ounces of chopped leftover ham. Sooooo good! I'm retiring my mom's old recipe -sorry Mom!

Chicken In Sour Cream

No need for onion soup mix. Low sodium cream of mushroom was plenty salty! Per previous reviews, added garlic powder. Also, poured oil from pan, then deglazed pan with white wine and a dab of butter, added that to the sour cream mix. Excellent! Next time, I will try just baking, no browning, for quicker prep time (as another reviewer did).

Mushroom Pork Tenderloin

After reading the reviews, decided to make this with the following changes:chopped the garlic (2 cloves), and added it to the paprika, salt, pepper, and thyme to make a rub. Covered the meat with this, and let it sit while I got everything else ready. Chopped half an onion, and added it with the mushrooms and lemon juice. Also threw in about half a cup of white wine during the gravy stage. Wonderful! I just have to remember that they pre-soak supermarket tenderloins in salt solution, as mine was a touch over-salted. Will use again! Great over wild rice, with green beans (cooked with a bit of bacon).

Hamburger Potato Casserole

Tips: Cook the onion and ground beef together, add some paprika too. Mix a couple of tablespoons of mayo in with the soup, add a can of drained green beans, use a mixed blend of cheeses, and really slice the potatoes thin. Awesome-we ate every bite at one sitting!

Honeydew Kiwi Cooler

I liked it, but the kid and hubby didn't like the texture of the kiwifruit seeds in the drink. Was refreshing - I added some cream of coconut too, and that was very yummy. Not the best success, but a good way of using honeydew up.

Traditional Reuben Casserole

Really like this one for a cool Fall dinner! Even the teen liked it. If the dressing mix is too much, just reduce it a bit - no biggie. I didn't cube the bread, just tore it into pieces, and you know what - turned out fine. This is a lovely, no-brainer meal!

Country Apple Dumplings

Very good! (Don't know why I was so surprised, after all the reviews I read.) I did cut back, without any noticeable issues. Used 1/2 cup butter, only 3/4 cup sugar, doubled the cinnamon, and put 1/8 tsp. ground ginger in as well. I think next time I would also add a little ground cloves and nutmeg, as I like them spicy! Didn't have Mountain Dew, but I had some grapefruit soda (Squirt or Shasta), and it worked fine. Family LOVED them! Still can taste the canned crescent dough flavor, but all in all, I would make these again.

Neptune's Favorite Crab Bisque

I would look for a stronger seafood flavor in a seafood bisque, but it was very good. I used lobster tails, and it was rich and filling! Nice addition to a holiday meal.

Kielbasa and Cabbage

I thought this was just a take on what my mom used to throw together, but this is really a good balance of salty, sweet, slightly spicy, and just all-out nomness. Hubby really, really liked it! I made it with the buttered noodles, although I think the sliced cooked potatoes would be awesome with it, too. And NO caraway for me, thanks! :) And I used beef smoked sausage, which was very yummy. Might use chicken broth instead of plain water next time. Very tasty!

Sesame Seared Tuna

Fantastic - both hubby and kid loved it! Definitely getting quality ahi is key. I didn't have mirin, and used agave nectar instead of honey; also added a tablespoon of Moonstone's Coconut Lemongrass Sake to the dipping sauce. Yum! I marinated for 30 min. each side, and ground black sesame seeds over it after cooking. Garnished with fresh grated daikon radish and sliced green onions. Was requested to "do this meal again!". (Served chirashi sushi with it, and steamed spinach w/soy sauce.)

Buffalo Shrimp

Swiss Mushroom Pie

Very similar to a recipe from an old French teacher. Very yummy - but unless you're eating this as a brunch item, I'd have it as a side dish...and don't dice the onion, slice it super thin. A mix of meaty mushrooms is best. Mmmmm...
