I used leftover boiled potatoes, frozen broccoli florets and low sodium chicken broth. I sauteed onion and garlic in two TB butter - added the other ingredients, simmered until the veggies were smooth. Used my immersion blender to blend in the pot. Stirred in cheddar/monteray jack cheese. Perfect!
