Onion Roasted Sweet Potatoes

MMM so yummy! I love the sweet and savory mix. I was looking for a recipe like this without sugar that I could use more as a side, not a dessert. Thanks for this, was too easy. BTW I only cooked for about 25 mins and they were perfect. No burnt onion pieces.

Chewy Chocolate Chip Oatmeal Cookies

These are the most amazing things i've ever made! So easy and delicious, i'm making them right now for the second time in three days. I took advice from a few other posts, I added more flour and baking soda, I mixed the butter and sugars for awhile until very light and fluffy and hand mixed the rest. Then baked on 335 for around 13 minutes watching very closely. PERFECT! Just barley brown on the bottom, moist and chewy in the middle and the oats make it very hearty. I think the amount of salt is perfect, I love the mix of saltiness with chocolate (which i added a little extra). The walnuts give it a great crunch and flavor. I had to pat them into more disk shapes rather than balls as they held their shape and didn't flatten out at all. Thank you so much Panthera and to the others for posting your tips!

Slow Cooker Chicken and Dumplings

This turned out reeeeeally good! I added a can of peas and carrots (but I put them in the beginning and I should have waited until towards the end when I added the biscuits), seasonings: seasoned salt, cumin, lot's of garlic powder and fresh ground pepper and a splash of milk and flour to thicken it up. I also used flaky butter flavored biscuits and that was very yummy. I tore them apart and rolled into little balls before throwing in to be more like actual dumplings and let them cook about an hour. Soooo good! I couldn't stop sneaking bites and was full before everyone else ate, haha! My family tore it up and cleaned out the crock pot. I feel like I need to do cardio the next day, but this makes great sick, hungover or snow day food. Thanks for this recipe and for all the suggestions!

Hummus III

This was ok, kinda bland. I've had better, but I've never made it before so maybe I did something wrong. I ate a little bit of it but then it kinda sat in the fridge and no one was interested. I'll have to keep looking.

Colleen's Slow Cooker Jambalaya

YUM! I absolutely love anything spicy and this is so awesome for cold days! My kids won't eat it because it's too spicy, but I definitely will and hopefully my husband will. And honestly, you don't HAVE to have rice, and it's a nice low carb, very filling and satisfying bowl of soup/stew. But I am currently waiting for my jambalaya flavored rice to get done cooking, about 20 more minutes and i can't wait. Funny, i'm watching the waterboy on tv while eating this. Only thing I did different, was used red bell pepper, cause it's all I had and put lots of sliced garlic in it and some extra cajun seasoning. and i didn't have andouille sausage, although i'm sure that would be amazing, so i used ground vegetarian "sausage" and it's really good, but i'm sure not the same. It's all I had though. Super easy to put together. I will def be making this A LOT!

Shrimp Lemon Pepper Linguini

This turned out really good! I was searching forever to find a good pasta/shrimp dinner that wasn't made with Alfredo sauce or coconut milk (which both are delish, but i'm trying to watch the calories) and I had everything on hand and it turned out yummy. I doubled up on the sauce which was a good idea and I used thin spaghetti noodles cause thats all I had. I used the Barilla Plus noodles (which I highly recommend) and it's not a full lb in the box, and I didn't use all the cooked noodles. I left maybe 1/3 out. I made it in about 40 mins, really easy, not a lot of prep at all. Yum!
