I made this, and even though my hubby doesn't particularly like peaches, or hot fruit, we loved it!
I halved the recipe, making it in a glass loaf pan. I blanched the peaches for a minute to make the peeling easier. I followed the recipe, except for adding more cinnamon, because that is our taste. It turned out yummy!
Because my oven is only convection, my topping was slightly overcooked and dry-ish, but that is my inexperience with a new appliance. Next time, out at the 20 min. mark Also, the caramelly goodness was a bit thick - same appliance/experience issue (I do keep a thermometer in the oven, so I have a better idea of the temp - again, new appliance)
I would definitely make this again. I am planning to try different fruits and berries, depending what is on sale.
I would make this again - for sure.
