The Best Thai Coconut Soup

This was fantastic and very easy to make. It was nice that most of the ingredients were those I had on hand or was easily able to purchase. This turned out so tasty and would be a coconut soup I'd expect to buy at a restaurant. I made some rice noodles (like those used for pad thai) on the side and added the soup to it, which made it incredibly filling. My husband gobbled this up and we'll be adding this recipe to the recipe box so we can make it again.

After-Christmas Turkey Potpie

Great recipe and super easy to make. It was my first time making pot pie and it turned out perfect. My husband who's starting to get sick of our leftover turkey really enjoyed this and even had seconds. Doubling the soup made the filling a bit more soupy, which is just the way I like it. I didn't have green beans on hand so I just added frozen peas instead. Like another reviewer, I used a Tenderflake frozen pie crust. This is delicious and I will be making it again throughout the year with chicken instead of turkey.

To Die For Blueberry Muffins

This is the best muffin I've ever had. I read some reviews so I made minimal changes and it turned out fabulous. For the topping, I followed the suggestion to use brown sugar instead of white and reduced it to 1/3 cup as I found it a tad too sweet for me when I used 1/2 cup. My husband brought these to work and his coworkers loved them! My husband also commented that these are the best muffins I've ever made and requested I make more just days after I baked them for the first time. This recipe is definitely a keeper.

Turkey Pot Pie

I made this recipe with leftover turkey after Christmas and I liked the pot pie better than the turkey on its own. My husband devoured the pot pie and was so happy that I made this rather than being stuck eating the same boring turkey for days on end. This pot pie is in my recipe box and I'm definitely making this again. I'm certain this would taste just as great as a chicken pot pie.

Zucchini Herb Casserole

I made this recipe last night and it turned out great. I followed a few suggestions I read in the reviews and I was very pleased with the results. My modifications were: increase to 1 cup rice, cooked in 2 cups chicken broth, triple seasonings except for garlic salt I didn't measure how much cheese I put on top of the casserole. I put just enough to cover the top a little bit. This is a great veggie recipe, which is awesome for times when I don't feel like eating a heavy meaty dish.
