Best Cream Of Broccoli Soup

"Best broccoli soup I've ever had!" my husband said. Sound like 5 starts to me! I diced 1 potato instead of the celery and I added garlic in with the onions. Used a potato masher instead of blending it and skim milk. I had to thicken it at the end a little with cornstarch/water blend, but that's probably because of using skim milk. It was fantastic!

Tender Italian Baked Chicken

Very simple and very good! I was hesitant to use mayo, but it turned out perfectly, not greasy at all. I didn't use as much mayo as the recipe called for though, just enough to lightly coat the chicken. I used 9 chicken tenders instead of breasts and added lots of spices to the breadcrumbs to add more flavor. I had to cook it 10 min. longer (30 total) for the chicken to be cooked all the way through. Cooking on a wire rack over a cookie sheet helps a lot too - makes it much more crunchy! Even my 2 year old ate it! Yum!

Cream of Mushroom Soup I

Very good soup! I did saute the mushrooms and onion together with minced garlic until soft and clear. I made the sauce (butter flour milk) in a separate pan and then added it to the mushroom mix. I then simmered the whole thing together with the broth and thyme and pepper. (no sherry) It was wonderful!

Savory Pork Roast

Absolutely delicious! This recipe was so easy, it was in the oven in less then 5 minutes! I added 3 teaspoons of olive oil to the spices and coated the roast. I had a 1.5 pound roast and I still used the same amount of spices from the original recipe. It still had to cook for over an hour, even though it was a smaller size, but it was moist and juicy. I put some large slices of onion in the pan and they were tasty too! Highly recommended recipe.
