Savory Apple Pork Chops

we tweaked it a bit. I emailed this recipe to my husband to get started before I left work. He took the recipe, eyeballed all the ingredients instead of measuring and used Jack Daniels BBQ sauce instead of ketchup. He reduced the amt of sauce to just a simple glaze, and cut apples in 1/8th's instead of thin slices. He servied it and it was AMAZING. Flavors were great, the bbq roasted apples were VERY flavorful and fun. the boneless thick pork chops were SUPER juicy and perfectly done. cooked for about 40 min I think - our oven isn't the greatest - might take less time for you. Served w/ brown rice and green beans. Will be a staple in our home for making pork chops.

Tangy Slow Cooker Pork Roast

this is the best pork recipe I've found on this site. I adjusted as follows - halved recipe for just 2 of us - skipped onion (didn't have fresh and we don't care ALL that much for it), skipped salt altogether - used 1 tsp cayenne pepper instead of hot sauce. threw in a bit of worchestire sause cause we love that flavor. dbl'd black pepper. SO juicy, nice kick without overpowering pork - served with mashed potatoes and green beens, used left overs as pulled pork sandwiches - truly an awesome recipe - will definitely be keeping and using often.

Curried Butternut Squash and Pear Soup

made a few changes for time/ease - used prepackaged diced steamable squash - cooked for a bit in the microwave then threw it in - used canned pears - put in just enough to heat through since they were already soft - added a touch of cinnamon. was very happy with it - will maybe try it fresh next time instead of canned - just didn't want to go through all that extra work if I wasn't going to like it. Hubby doesn't care for curry, but he was able to eat it - I loved how the curry cut the sweetness - didn't really notice the pear, but again, used canned and might have been overpowered by more squash than called for. Overall, a good soup I'll make again.

Spinach Lasagna Rolls

followed recipe exactly except added some garlic powder, basil and orgeno to chs mixture. turned out well, made just enough mixture and rolls were perfectly shapped and didn't fall apart. next time I might use half amt of cr chs and use 1/2 amt of ricotta - cream chs made it too heavy and there wasn't enough of an "italian" feel. will also use fresh spinach instead of frozen.

Figs with Goat Cheese, Pecans and Bacon

yuuuuuuuuum.....left out pecans cause didn't have - used garlic/herb goat chs, used pitted dates because couldn't find figs at the store - cooked bacon a little bit, only until just starting to brown and still very plyable - through under high broiler for 5 min and turned out great. Will definitely be making again as my staple party appetizer.

Pasta with Roasted Butternut Squash and Sage

followed recipe except I used mild italian sausage (not a fan of turkey) and used skim milk and cornstarch instead of heavy cream. Also only used 2 tblsp instead of 3.5 of balsamic - seemed a lot. husband, who usually eats any recipe I try, wouldn't eat it. WAY to sweet. i love balsamic and sage, but i didn't finish my serving, either. Just not good at all. don't know what would improve it except maybe skipping balsamic all together.

Spinach and Strawberry Salad

only 3 stars cause - it's a salad that you can make at any salad bar. the dressing was to sweet for me and the suger never really dissolved so was a little gritty - i'll just stick w/ my balsamic vinegrette - but don't get me wrong - this was a great salad - just...not really a recipe

Easy Breezy Casserole

only gave it 4 stars cause I tweaked it. Used 1 can cream of chicken, 1 can cream of broccoli and 1 can cream of mushroom. Seasoned chicken breast with salt free chicken grill mate seasoning, pepper and freeze dried basil - eyed it - used quite a bit of each - sauted chicken in butter and 1/2 tbsp minced garlic w/ juice from the jar. used 1 bag shredded reduced fat mild cheddar - mixed 3/4 in with casserole, put 1/4 on top. Used whole bag of frozen broccoli, cooked. Husband and I were pleasantly surprised - casserole's with this much cream of XX soups usually are to heavy and sit funny in our tummies - this, though, tasted great and was very satisfying. Will definitely be our go to casserole when we need something for leftovers!

Shrimp and Asparagus

I'm giving this 4 stars because I did tweak it and will tweak further - but loved it overall. Halved the recipe for just my husband and myself and still have a lot left over. Used Angel Hair pasta instead of egg noodles. I sauted garlic (will use more next time) in olive oil (WAY TO MUCH called for in recipe (1/8 cup all that's needed for serving of 4 if that) and then added butter (again, to much - will use 1/4 cup for serving 4 instead of 1/2), lemon juice, asparagus (raw) and some white wine. Skipped mushrooms cause neither my husband or I like them. After the asparagus was almost fully cooked, I added 1 lb of lg shrimp and 1 tbsp of Salt Free Poultry seasoning and pepper to taste. Did not add any salt at all. When shrimp was fully cooked, I removed shrimp/asparagus from sauce, added 1 tbsp of cornstarch diluted in a splash of white wine to avoid clumping, to thicken the sauce - then tossed pasta, sauce and shrimp/asparagus together. Served w/ fresh out of the oven pillsbury simply rustic french bread. Forgot to top w/ Parmesan, but didn't need it - was still good. So much oil left on the plate after we ate we used it for dipping w/ the bread. Could use more vegetables - maybe some zucchini and carrots - overall, taste is awesome - just trying to cut back on fats, cholesterol and salt, so reducing amt of oil and butter is good - use white wine and cornstarch to increase amt of sauce if you want more. Loved the simplicity of it. Looking forward to making again!

Roasted Beets 'n' Sweets

nothing special here - not sure what all the fuss is about - followed recipe to a tee except added br sugar instead of white and used 1/4 amt of onion (not big fans) it was just okay - trying to find recipes that'll get my husband to eat more veggies - he tried it and couldn't eat it. Waste of perfectly good ingredients. I ate it, but won't be making again.

Flatlander Chili

Made some changes based on other reviews - I used 1 lb beef, 1 lb mild italian sausage. I used 2 cans of diced petite tomatoes and 2 cans of tomato sauce. I used one can dark Kidney beans and 1 can chili beans w/ medium sauce. Drained/rinsed kidney beans but adding the sauce from the chili beans. I dbled all spices, cooked meat in Worchestir sauce, used only a 1/2 cup of onion (not huge onion fans), 1 green pepper cut into md chunks, no celery (husband doesn't like it) I cooked the meat, spices, onion and green peper in the skillet, then combined it w/ the sauce and beans. Cooked for 3 hrs on high, then 2 hours on low in the crockpot. half hour before it was done, I added a 1/4 cup of cornstarch since it was a little watery to my liking - next time I will drain the diced tomatoes so it won't be so watery. Brought to friends house for dinner and everyone loved it. Husband said it was the best chili I've made yet. Hostess said it was just the right amt of heat for her. i was running late so whipped this up and into the crock pot in only 20 min - super easy to make.

Orzo with Chicken and Artichokes

Only reason I didn't give it 5 stars are the alterations I made and that it still wasn't perfect. But overall, love the idea and using fresh/organic ingredients. Followed many other reviewers suggestions: Used Marinated Artichoke Hearts Added sundried tomatoes, black olives and ready to eat edamame Left out onions because none of us like them. Used turkey bacon instead of panchetta dbled recipe for dinner party but still used only 1 bag of pasta. was perfect amt we served w/ rosemary rolls and ceasar salad. Balsamic was a little strong since there weren't any other seasonings used - was going to add packet of dry italian dressing but forgot - will definitely use it next time - wish there was a little more of a sauce - maybe add some corn starch to the liquid at the bottom to thicken it up? But loved the combo of ingredients and leftovers still tasted great - will make again - great for dinner parties with everyone bringing a side or appetizer since is a full meal in 1 pot. ****ammendment - Made this a 2nd time but halved it - added the italian seasoning packet and used balsamic dressing instead of vinegar - also used some corn starch to thicken sauce. I liked it much better w/ the dry italian and thickening up the sauce - will stick w/ balsamic vinegar cause I like the strong flavor - left out chicken for vegetarians and didn't miss it - great veggie meal w/ lots of flavor!

Slow Cooker Fall Harvest Pork Stew

I adjusted just a few things - trimmed fat off pork, added a 1/2 can of beef broth, ground pepper to taste and some Lawry's seasoned salt. I didn't think just Thyme would be enough flavor for me. 3 stars for the apples. My husband and I were both gone all day so it did cook the full 8 hrs. Flavors were decent/good if not slightly bland, liked the pork (a BIT dry, so could have probably stopped cooking in 7 hrs), squash and parsnips. But the apples were complete mush. I didn't stir them in with the rest of the stew, either - I had them on top worried they'd get to mushy in the liquid to early. The texture was too off for me to eat them, even though the flavor wasn't bad. so ate around them and wasted 3 perfectly good apples. Will make again, but will either leave the apples out all together and serve along side or wait to put them in for just the last part of cooking.

Downeast Maine Pumpkin Bread

I took reviewers advice and did a 1/2 cup veg oil and 1/2 cup apple sauce. This is very moist and yummy. I will, however, in the future, dbl the amt of spices. i can barely taste them. I might also add more pumpkin - again, very mild flavor. I used 2 9X5 loaf pans instead of 3 7x3. Still turned out, but had to keep it in the oven an extra 20 min.

My only issue w/ this recipe is how much cresent is on the ends - not easy to get to the cream cheese for a "dip". Tastes great though - kind of hard to screw it up it so easy!

Artichoke Spinach Lasagna

I LOVE this lasagna. My friends always ask me to make it when we get together for girls night. You do have to make sure to really squeeze as much liquid out of the frozen spinach as you can - took me a few times making it to get the right consistency. You can probably use less broth as well. All in all, though, great flavors, nice and fairly healthy - great vegetarian option - I don't even miss the meat.

Filet Mignon with Rich Balsamic Glaze

nice flavorful steaks - didn't spend the money on filget mignon - can use on any piece of red meat, really - I like my steak with bold warm flavors so this fit the bill. Easy to keep from blackening, too. one of my favorites.
