Authentic Mexican Shrimp Cocktail (Coctel de Camarones estilo Mexicano)
I love the freshness of this Ceviché! I made a few changes to the recipe in that I used less than 1 tsp of the recommended 2 tsps of salt(that is alot!) I also used low sodium Heinz ketchup. I used 2 jalapeno peppers and also added a tablespoon of horseradish. Although many comments say how great this recipe is for the summer, I have prepared this for a Christmas party serving it with the Tostito Scoops. The colours in this preparation are perfect for the season!

Portobello Mushroom Burgers
These are among the top fav of my family, friends and neighbours. I have been making these for years. Topping of course vary by coniseure but I like carmelized onions as an option, crispy bacon and I prefer to sample different cheeses. A good slice of mellow blue cheese just melts in your mouth. Oh so Awesome!

Carrot Souffle
Why is this even considered a souffle??? I baked it and it is so heavy. Nothing at all like a light and airy souffle... It tastes okay, I too cut back on the sugar and also used spelt flour and pure cane sugar. I also shredded the carrots prior to cooking and mashing. I am just not certain about considering this a souffle...its more like a baked carrot custard or quiche.
