Chef John's Salt Roasted Chicken

Wow, this is the best roasted chicken ever, I didn't know white meat could be sooo moist! I followed the recipe exactly, no changes. The chicken comes out of the oven a beautiful brown with crisp skin. Did I mention how moist it is? All that being said, it was a little salty for me (yes, I wiped the pan & used coarse kosher salt) but I've been on a low sodium diet for years so I'm very sensitive to salt. My husband thought it was perfect as it. I'll experiment with a little less next time. The sauce is fabulous. Thanks Chef John!

Quinoa Porridge with Cinnamon Apples

Tasty, but frying the apples in butter kind of defeats the health benefits of quinoa. I just add the apples and cinnamon to the quinoa and cook it all together. I sweeten with stevia, but you can certainly use the maple syrup for flavor and sweetness. I also add one-quarter cup walnuts for some healty fat, but that's a personal preference.

Stuffed Cabbage Rolls

My Polish family has been making this recipe forever and it's always a big hit! I use more onion, fresh garlic and recently started using brown rice. I don't use toothpicks or string, I just roll in the leaf and put the seam side down. My 90 yr old mother doesn/t roll them at all, she makes meatballs, cuts the cabbage and puts on top, then covers with tomato soup. Still delicious and less work.

Portobello Mushroom Burgers

Fantastic! Meaty & flavorful - I used my stovetop grilling pan and they came out great. Good alternative if you're cutting back on red meat consumpton. My husband and daughter love them, I make them once a week.
