Healthy Banana Cookies

Super sweet treat when your watching calories and want to maintain a healthy diet. I did substitute the oil with unsweetened apple sauce and added a touch of honey, a shake of pumpkin pie spice and half a scoop of my whey protein shake powder. Toddler did not like them but everyone else did!

Spicy Chipotle Turkey Burgers

First time ever making turkey burgers or cooking with ground turkey period! Very yummy! No more ground beef for us! Kids thought it was a bit spicy but I loved them. Made as is. Don't forget to indent the middle so they don't shrink up to hockey pucks and they only made 3 s/m burgers for us. Def doubling recipe next time.

Kathy's Delicious Whole Slow Cooker Chicken

I've never cooked a whole chicken in the crock pot before...OMG...this turned out so yummy. The flavor...out of this world......fell of the bones....no carving this bird. Will make again and again...might try boneless chicken breast too

Golden Potato Soup

I've made quite a few different potato soup recipes and this is the best by far. Super easy too. I omitted the celery cause family doesn't like it. Instead of bouillon and water, I used a can of chicken broth and added a 1/2 extra water. Yum yum yum were the only words spoken at dinner...made it with sub sandwhiches.

Caribbean Zucchini Bread

Let me start off by saying I suck at making bread. It always comes out burnt around edges and raw in the middle. This bread came out perfect. The only change I made was I left out the coconut. Yum yum yum. The boys ate the first loaf in a couple of hours! I would feel proud sending one of these off as a gift or for a pot luck. Next time I might leave out the nuts, (toddler didn't like those). Tip, I made sure there was some distance between the loaves in the oven, also half way thru I switched their sides. I think I cooked them for 55 min. I probably could of got away with 50. Either way this is a great recipe. Will make again and again!

Good Old Fashioned Pancakes

I usually use a IHOP buttermilk recipe that is crazy good. Well this one blows it out of the park. I did add 1 tsp vanilla, choco chips and glazed pecans on top! Diabetic coma! Yum yum. I did also let ingredients gets to room temp and sifted flour twice.

Black Bean and Corn Quesadillas

This is the BEST quesadilla reicpe ever! Oh so easy...my whole family loved it and begged for more. I made a few small changes...I had no salsa so I used rotel I also added a dash of cumin. I used kraft shredded american/chedder mix of cheese. I also left out red pepper flakes because I had little ones eating this. Mmmmmmmmmmmmm! Will make again and again! Pair it with Newman's mago tango salsa and some quacamole...you will never eat mexican out again!

To Die For Blueberry Muffins

Very good muffins, I made the blueberry cream muffins a few days ago and this recipe is way better. I did not make any changes to the recipe itself just the topping. Will make again but also still looking for the best bb muffin recipe!
