Beef Noodle Casserole

This turned out wonderful. My entire family and company enjoyed it. I left out the pimentos and chilis and used fresh mushrooms. I didn't want to burn the cheese, so I added after I plated it. I will definitley make it again.

Coconut Curry Tofu

The whole family loved this one. Both my boys even like the little bit of heat and the tofu. I used spinach instead of bok choy as I already had it on hand. I did use a little more sugar as it balanced out the heat for the kids. I will definitely make this easy and delicious meal again.

Black Bean and Corn Quesadillas

Both kids requested that this become a regular meal. It was very simple, healthy and delicious. I will definitely make this again. I did skip the onion and red pepper flakes and used about 3/4cup of salsa.

Stir-Fried Vegetables with Chicken or Pork

This is a very delicious recipe that's not time consuming. Both my kids and my husband agreed that it was worth making again. The only changes I made were based on the veggies I had on hand. Added mushrooms and corn but didn't have cabbage, sprouts or zucchini. This recipe is very versatile and the simple sauce worked nicely.

Ground Beef Stroganoff

I have made stroganoff before and it wasn't nearly as good as this. That being said, I now know that I'm not a fan of this traditional dish. I just can't help but feel like I need to add more veggies and seasoning. The only change I made was to use more sour cream and no mayo. I'm glad to have had a more authentic recipe to try. Thanks.

Authentic Louisiana Red Beans and Rice

This was very hearty and full of flavour. I used less cajun seasoning as my little one wouldn't have eaten it with the heat. I used chicken sausage as that's what I had on hand. I will definitely make this again.

Mom's Ground Beef Casserole

This turned out really well and was simple to put together. I used far less noodles as I didn't need that many servings. I used 2 cans of condensed cream of mushroom because that's what I had on hand. The kids and my husband enjoyed this.

Parmesan Asparagus

This turned out amazing and was such a nice change from garlic butter. I did use an entire bunch on asparagus so it took a bit longer. I used garlic instead of garlic salt. I'm keeping this one and will serve it to guests. Thank you.

Stuffed Green Peppers

These turned out wonderful. I used mixed beans for added colour. I love the layering of the cheese and rice. I did shred my cheese instead of using slices. My sauce was a butternut squash pasta sauce that worked out lovely. Thanks so much for sharing.

Divine Meatloaf

This really is divine! Everyone, including both my kids gobbled it up. It keeps well in the fridge so the leftovers were also very delish. I used corn flake cereal crumbs instead of saltines but otherwise followed the recipe exactly. Thanks for sharing.

Easy Spiced Brown Rice With Corn

I prepared this with quinoa instead of brown rice in the interest of time. The protein is a great bonus too. Otherwise, I followed it exactly. It turned out wonderful and even my 4 year old who won't eat quinoa generally loved this. It was meant to be a side dish next to the tacos I made, but everyone loved it IN the tacos. Awesome!

Zippy Shrimp Linguine

This recipe went over very well with my whole family. It was very balanced and the kids love the shrimp. I love that it was simple and quick to prepare and had a lot of flavour. I did leave out the butter as the olive oil was enough. Thanks for sharing.
