Peach Ice Cream

Reviewed: Aug. 11, 2013
Good thing I cut the recipe in half. I use my Kitchenaid ice cream attachment and it was just the right amount. Be sure when you adjust the amounts that the directions needs to be adjusted as well in reference to number of cups of peach puree. I used 5 peaches and it was exactly 2.5 cups. Also, the recipe does not mention to peel the peaches and may think it is a given but it should say peel, pit and chop. another tip is to chill the mixture before pouring into you ice cream maker. It helps. I was in a hurry and did not do this so it did not freeze as usual. Very creamy, peachy and easy to make. Finding ripe peaches was probably the more challenging part.

Quinoa and Black Beans

Reviewed: Jul. 15, 2012
Very good and easy recipes. I had a lentil/quinoa mixture I used and good it in the vege broth separately. Then I sauteed the onions, garlic together with canola oil. Once lightly browned I add the frozen corn and cooked it with the onion mixture. Added the black beans to the onion mixture; heated through then added the cooked, fluffed, quinoa/lentil mixture then add the cilantro. Very good and healthy. High protein and fiber.

Spicy Turkey Burgers

Reviewed: Mar. 3, 2012
These were exceptional. I used poblano peppers and slightly sauteed the garlic, onion, ginger and poblano in a tablespoon of canola oil. I used my George Foreman grill and froze half. I did not place on bun and served with roasted corn off the cob and brown rice. Great, healthy meal.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Reviewed: May 29, 2011
WOW - I used a chipotle BBQ sauce so it was spicey but I love spicey so it was fantastic. The pork marinated in the spices for about 8 hours. So tender and delicious. I grilled it for 5 minutes on one side then about 8 on the other but these were over a pound each. Then a basted and grilled for a while longer. Removed and let rest for 30 minutes covered with foil. Can't wait to make this for my son and daughter-in-law. Definately will save and make again.

Grilled Chicken and Pasta Salad

Reviewed: Jun. 8, 2010
Since asparagas is in season I used one bunch of spring/baby asparagas; cut into 1" pieces and put in pasta water a minute before pasta was done cooking. I varied from Step 4 a bit so I can use as leftovers. In large bowl I put everything but the lettuce, added extra tomatoes and about 1/4 c asian ginger low fat salad dressing. Tossed then mixed only one serving with chopped romaine. Very tasty and it keeps well for a few days.

Pesto Tuna Salad with Sun-Dried Tomatoes

Reviewed: Jun. 8, 2010
Very tasty. I used lite mayo and may try less pesto next time to decrease the fat content but really takes tuna to another level. Used on the Orowheat Multi-grain sandwich thins.
