I left the skin on, using 3 very large potatoes, and wrapped the pan in foil. I cooked them at 400 degrees for 45 min's turning them every fifteen minutes. I doctored the spice mixtures as follows: 5 tsps brown sugar, 1 tsp black pepper, 1/4 tsp cayenne pepper, 1/2 tsp chai spice mix, 1/2 tsp cinnamon, 1/2 tsp white pepper, 1 tsp garlic salt, 1 tsp cumin. I let them cook until they were starting to turn black and they were AMAZING! I will definitely make these again, they really spiced up left-over night!
