Crustless Spinach Quiche

LOVED with modifications per other reviews! I used 7 eggs, 1.5 cups cheese (and used sharp cheddar), half the amount of spinach, added chopped mushrooms, nutmeg, and garlic powder. No pepper because I don't like it. Cooked perfectly in 30 minutes in glass 8in dish.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Excellent! Perfect snack! I decreased sugar to 1/2 cup and used bittersweet chocolate instead. I might try adding a little oil/butter next time but they were really pretty moist even without it!

The dish is good, but I think I just don't have a taste for savory cinnamon dishes. Or maybe it was the turmeric. I might just not be a very exotic eater!

Love it! I added chicken by browning the outsides initially then adding it to the sauce and letting it all cook together. Then I only use about half the pasta.

Black Bean Salad

I make a big batch of this for lunches almost every other week. Love it! I usually use two cans of black beans and one can of corn (better as a lunch). I don't include the jalapeno peppers or the pimentos, mostly because I don't keep them around. And I often use cucumber instead of green pepper.

Stuffed Eggplant with Shrimp and Basil

This was such a pretty presentation of food that I'd be excited to make it for others. I didn't have some of the ingredients so I made some substitutions and it was still great - I used beer instead of wine, and mixed the cooked shrimp and eggplant with ricotta cheese. I didn't have parmesean but I'm sure that would have made it even better.

Ground Turkey Soup

Great base recipes. I used 8 cups of chicken broth instead of water and the bouillon cube, added onions, garlic, and a bunch of spices (bay leaf, thyme, basil, rosemary, more garlic, salt). I seasoned the turkey with these as I cooked it as well. What really made this taste amazing was sprinkling a little shredded romano cheese on top - created a fantastic combination of flavors.
