Mint Chutney

STRONG!!!! Actually, I probably just put way too much mint in it, and I may or may not have used a jalapeno instead of a chile, so that would be the explanation. My advice, then, is to substitute extra mint for the cilantro and a jalapeno for the chile if you want something that will blow your tastebuds to mintland (which is actually kind of nice this time of year), and not to do that if you aren't interested in the mint-coma. WOW.

Peanut Butter and Pumpkin Dog Treats

Very, very, very difficult to form into a coherent shape. However, they're a five star for taste---my little taste-tester nearly bit my hand off when I let him sample them!

Savory Mushroom-Barley Soup

This soup is beautiful---and tasty! The liquid component is a little bit heavy; to make it thicker, I didn't use quite as much water (the barley didn't suffer) and didn't add any vegetable broth---instead of cooking the mushrooms, carrots, onions, and celery in oil, I cooked them in water and used the vegetable broth to cook the barley. I used a little bit of V8 Tomato Herb soup instead of tomato paste.

Basic British Scones

These are a little dry, even for scones. Definitely want to be served warm and softened in tea. But they rise beautifully in the oven and have a lovely texture.

English Royalty Chocolate Chip Scones

Of the three types of scones I brought to the Garden Party, these were the highest-rated. Not sure how much was the texture and how much was the chocolate, but people loved these.

Apple Scones

These got a little drier than I was expecting, and 15 minutes was a little too long to cook them---they were done in 10 and slightly burnt at 15. Of the three types of scones I brought to the garden party, these got the lowest overall rating by fellow partygoers.

Good with the garlic, or plain! I ended up halving the recipe but adding a full egg, and then skipping the butter at the end to balance out the liquids and solids. Also, used half whole wheat flour.

Apricot Lentil Soup

Really interesting concept! I skipped the spices and added ginger, carrots, and curry powder instead. Definitely go lighter rather than heavier on the apricots---a little bit goes a long way. Spinach, raisins, and/or almonds would give this a more attractive color, I think.

Berry Cornmeal Muffins

Great for a breakfast muffin. I think my family was expecting more of a dessert muffin, so they gave it a pretty good smack-down. But we ARE talking about a muffin with the calorie content of a granola bar (as opposed to a normal muffin, which has pretty much the same nutrition facts as cake), and for that it's pretty eatable.

Sauceless Garden Lasagna

Perfect! To solve the moisture problem cited by other reviewers, I skipped the balsamic vinegar (adding just a dash of cider vinegar instead), dry-roasted about half of the vegetables, and patted the tomatoes dry. In retrospect, I think omitting the vinegar and drying the tomatoes would have been sufficient without roasting the veggies. I also added broccoli to the mix.

Polenta and Vegetable Casserole

This dish single-handedly converted my mother out of the ideology that meat makes the meal. It's a completely filling, satisfying, great-tasting main dish for vegetarians and omnivores alike; a good choice for large dinners.

Bacon-Flavored Dog Biscuits

These were easy to cut into shapes---I made squirrels. The dough WAS sticky, so I had to flour the parchment paper very well (and repeatedly) to keep it from sticking while I rolled it out and cut it. I crumbled up little pieces of the bacon into the batter too.

Pumpkin Gingerbread

I am a college student and my spice closet is pretty limited, so I just used extra ginger and cinnamon instead of cloves and nutmeg. I also had to halve the recipe. Turned out great. Very strong ginger taste (predictably), extraordinary orange-brown color, and lovely moist texture. Leaves a spicy-sweet taste in your mouth; impossible to stop eating it.

Pumpkin Curry with Lentils and Apples

Mine came out a little bit bland, but I take full responsibility for that: I may not have estimated the lentil-to-spice ratio correctly, as I was using a full bag of red lentils instead of the recommended amounts of red and brown. Also, you may not need two kinds of lentils in there, but if you are picking between them, go with the brown. Red lentils against the pumpkin and tomato make this the most orange food ever with the added randomness of spinach and green apples. People ate it, but it was the most "left-over" dish I made for this dinner.
