Cranapana Bread

This recipe is great. The fruit to dough ratio is frankly alarming---it's actually hard to mix in all those fruit pieces, and the final product has two kinds in every bite! I used half a cup of mandarin oranges and only half the apple, and added some extra cranberries and a tsp of cinnamon. I also used only half the sugar, and needed to add just slightly more liquid than the recipe called for.

Peanut Butter Haystacks

Hummus III

The salt can be halved and the oil eliminated. Vegetables can also be added to improve nutritional value, but this is really good hummus just plain, or with extra lemon juice.

Peach Muffins

These got really brown in the oven and were generally kind of unattractive, plus they used too much sugar and oil for my personal tastes---hence only four stars. But the taste was great, and everyone at GCF loved them. Great use for Farmers' Market peaches!

Cinnamon Ice Cream

I had cinnamon ice cream ONCE, as a splurge during a diet, and no dessert has ever captivated me so. I looked for it in stores and ice cream shops for months before opening up to the idea that I could MAKE it. This recipe is perfect. It is exactly as I remember it... and I'm sure glad it's complicated to make (I don't have an automatic ice cream maker); otherwise I would need to go on another diet.

T's Sweet Potato Fries

Going on the suggestions of others, I did NOT cook the potatoes in the microwave first. At 30 minutes they were only baked, not quite crispy like fries, but I think that with a little more time they would have been.

Mint Chutney

STRONG!!!! Actually, I probably just put way too much mint in it, and I may or may not have used a jalapeno instead of a chile, so that would be the explanation. My advice, then, is to substitute extra mint for the cilantro and a jalapeno for the chile if you want something that will blow your tastebuds to mintland (which is actually kind of nice this time of year), and not to do that if you aren't interested in the mint-coma. WOW.

Savory Mushroom-Barley Soup

This soup is beautiful---and tasty! The liquid component is a little bit heavy; to make it thicker, I didn't use quite as much water (the barley didn't suffer) and didn't add any vegetable broth---instead of cooking the mushrooms, carrots, onions, and celery in oil, I cooked them in water and used the vegetable broth to cook the barley. I used a little bit of V8 Tomato Herb soup instead of tomato paste.

Basic British Scones

These are a little dry, even for scones. Definitely want to be served warm and softened in tea. But they rise beautifully in the oven and have a lovely texture.

English Royalty Chocolate Chip Scones

Apple Scones

These got a little drier than I was expecting, and 15 minutes was a little too long to cook them---they were done in 10 and slightly burnt at 15. Of the three types of scones I brought to the garden party, these got the lowest overall rating by fellow partygoers.
