Mouth-Watering Stuffed Mushrooms

these little guys are so good. i opted to add more mushroom stems in the mix (and just saved those extra mushrooms for omelets or stir-frys) because i love that flavor. also chose to add shredded parmesan on top and i liked that as well. just to warn you- these little guys are rich so 2-3 per person is more than enough. i got rave reviews after making these and even from people who don't like mushrooms

these are absolutely delicious! the only thing is DON'T over-bake. it completely changes the taste and consistency. these are much better on the gooey side! made these for family members who were in town visiting (and all of whom were on diets) and they gobbled these up so fast! they're irresistible... esp if you're partial to apples and walnuts.

Cake Balls

these are really tasty and pretty easy to create. they are time consuming to make though so it helps to bake the cake the night before and let it cool overnight. these little cake balls (or pops if you use lollipop sticks) are the creation of a woman who goes by the name bakerella ( and are great for baby showers and office parties. the original recipe calls for red velvet cake with cream cheese frosting, and in my opinion is also the tastiest although you can use any type of cake mix and frosting you like. when decorating its also the easiest to buy candy melts and melt them in little sandwich ziplock bags (leave the bag open in microwave) and then once melted just snip off one corner and you have yourself a very easy to use (and disposable) pastry bag. when you first dip the ball in chocolate it also helps to try to get off as much excess frosting as possible bc these little things can be very sweet. also recommend refrigerating balls before coating in chocolate. helps them hold up better! yum

very good, not-too sweet, little cookie. definitely agree with other reviewers in that you do not need 1 cup confectioners' sugar for the topping- i probably used half that amount and still had a lot left over. also doesn't quite make 24 cookies but they are very good. has the flavor of a horchata or a churro w/o being overly sweet. made these on a night we had mexican food and they were perfect!
