About this Cook
love to bake and would every day as long as someone will eat what I bake
My favorite things to cook
Cookies, cookies, cookies and did I mention cookies?
My favorite family cooking traditions
I use my Italian mother's metal measuring spoons in every cookie I make [kinda like she's in every cookie I make]
My cooking triumphs
no doubt--daughter's cookie table for her wedding
My cooking tragedies
as a very new bride, didn't drain grease from ground meat before adding to a casserole--knew I married a good man then!

Two Ingredient Pumpkin Cake
despite some reviews suggesting additions, I made this exactly as directed. It was fantastic, moist, and magically disappearing. If you are reading this, consider how simple and easy this recipe is--anyone, I do mean anyone, can make this and no additions of any kind are needed. Love this one and plan to stock up on pumpkin so I can have this one all year. Positively the easiest recipe I have tried and a positive keeper.

Taco Pie
my husband and son loved this!! two big helpings each!! I did tweek the recipe some--first, as another reviewer suggested I cooked the crescent dough as directed. I mixed the taco mix and a couple hefty spoonfuls of salsa while cooking the meat,(smelled great). I added a layer of whole kernel corn on the taco mixture, then sour cream, then the salsa (from the opened jar, all the cheese, and enough crushed Doritos to make a top layer. even though they are not good leftover eaters, they are already discussing whether to have it later tonite or for dinner tomorrow. This was simple to make and sooooo easy to layer together (husband not a fan of black olives, son not a fan of refried beans) but this was an absolute BIG hit. absolutely will make again (likely soon). Positively a keeper for me!

Strawberry Cake from Scratch
I have never made a cake from scratch before and I have been baking for a long time. This cake has several steps and does take time. I strongly urge 1)check to be sure your baking powder is still active; 2)separating the eggs is the best way to add them--I separated the eggs and beat the yolks before adding; 3)fresh strawberry is great--I used 6 big ones and 1 TBSP of sugar in my food processor. I think the next time (and there will be a next time), I'll cut back the flour to 2 1/4 c. I also think I'll use real strawberries using my food processor. I didn't think the flavor was strawberry enough and don't want to buy strawberry extract (but will consider it). The cake was good but a little denser than I expected but received the A-OK from husband so it must be good since he isn't a real big cake eater. Also I read the reviews and someone suggested to freeze the cake before frosting and it was far and above better than Pam (LOL)! I will make this again with fresh baking powder. I am very pleased with my efforts and the result was better than I expected!
