Honey Wheat Sandwich Rolls

Fantastic recipe with a permanent spot in my recipe box. I make these every week or so as sandwich buns for the boyfriend. I use 100% whole wheat flour and a couple tbsp of vital wheat gluten as well. I also add in some flax seed for the extra health kick and some rosemary to flavour it up. I think the rosemary definitely adds something special.

Fluffy Pancakes

best pancakes I have had.. EVER!! A couple changes as usual. I used almond milk and was still able to sour it with vinegar. Used 1/4 cup whole wheat flour and splenda instead of sugar. I also used Earth Balance instead of butter. I added in a healthy handful of chocolate chips and chopped up a banana in there too. So So Soo fluffy! Highly Highly recommended!! =)

Zucchini-Chocolate Chip Muffins

I wanted to make these a bit healthier so here were my changes as I doubled the recipe.. I used 2 cups whole wheat flour, 1 cup white flour, splenda instead of sugar, and almond milk instead of regular milk. I also didn't have apple sauce so I used canned pineapple that i pureed in the juice in substitution of the oil. Added a dash of nutmeg and cloves as suggested by another reviewer. They turned out very well even with all my healthy substitutions. =)

Groovy Green Smoothie

I used this recipe as my base but changed it up a little bit. I didn't have any grapes, so I went with another reviewer and used a whole granny smith apple (peeled, cored and chopped into chunks), 1/2 cup crushed ice, 1/4 cup original almond milk, 1/2 a banana and about a cup or a cup and 1/2 of spinach. It was excellent. Great smoothie to have on the go, or in my case, as a light meal an hour before yoga. =) Happy blending!

Baked Kale Chips

Wow! These WAY surpassed expectations. I would prefer these over a bag of chips any day! After reading reviews, I was very careful to watch for when they were just perfect, because a little bit of chewiness is by far better than the strange burnt taste they can acquire quickly. I rubbed mine with a bit of olive oil and layered them on the pan. I played around with a couple different flavours but my favorite was Salt and Vinegar. I used a Kernels Popcorn seasoning and just sprinkled it on top as it baked. I also tried soy sauce(in a bowl first to get on the leaves.. then on the baking sheet which was a close second favorite), garlic powder, cheddar cheese and just salt. I am definitely looking forward to trying out additional flavours. =)

Jamie's Cranberry Spinach Salad

Love this salad! I made it as is the first time and it was fantastic. The spinach, cranberries and toasted almonds are now my goto salad. Lately I have sauteed some portobello mushrooms and bell peppers over onion and minced garlic and added the hot mixture over the salad. Add some goat cheese and simply balsamic and olive oil and get ready for something delicious! Love it.

Mama's Best Broiled Tomato Sandwich

Absolutely amazing sandwich. This is by far my favorite meal to make. It is especially tasty on a thick slice of TOASTED rosemary bread. Make sure you leave it thick to get the softness still on the inside. If I am feeling especially fancy, I like to make it as a flatbread style and reducing my extra balsamic with cornstarch and drizzling it overtop. Enjoy!
