Chicken Broccoli Salad

Reviewed: Jul. 13, 2012
Fantastic salad! I don't use sugar, so subbed honey instead. Fried up a whole pkg of uncured bacon and added to the salad instead of sprinkling on top as a garnish. The dressing is perfect! Will make this salad A LOT!! There is a lot, but leftovers will be perfect for lunches.

Spiced Quinoa

Reviewed: Apr. 12, 2012
We did not care for this recipe. The ONLY saving grace for it was the pine nuts and raisins. Followed the recipe to the letter. I have already tossed my printed copy, and will be deleting it from my recipe box online. Sorry...it sounded interesting with flavors I love.

Coconut Jerk Chicken

AMAZING!!! The only thing I do different is use honey instead of the sugar, because I don't eat sugar. This recipe is delicious! A definite staple.

Coconut Peaks

Reviewed: Dec. 18, 2011
THANK YOU, THANK YOU, THANK YOU!!!!! I have been making these EVERY year at Christmas since I got the recipe in Home Ec in high school (I'm now 59, so it's been a LONG time), and left my recipe in AZ when I moved to the Pacific Northwest...I have been in mourning...These taste just like Mounds candy bars...they are a favorite with anybody who tries them! Besides shaping them into peaks, I also will just roll into small balls and dip the entire ball in the chocolate...SO YUMMY!!!

Prego® Sausage-Stuffed Green Peppers

Reviewed: Nov. 4, 2011
OMG!! How good is this!! I love this recipe! I've recently gone off grains, but love, and I mean love stuffed peppers. Since I no longer eat rice, I decided to search and try to find a recipe without. Man am I glad I did! I modified somewhat, but I don't think it detracts from the original recipe as submitted. I used half breakfast sausage, half lean hamburger, because I didn't have enough of either. Also didn't have the Prego sauce, so I made my own Italian sauce with homemade tomato sauce and spices. Other than that, I stuck to the recipe. Anybody who likes stuffed peppers, will L.O.V.E. this recipe. Give it a try...you won't regret it. AMAZING!

Chicken and Veggie Hand Pies

Reviewed: Oct. 7, 2011
Can't wait to try this recipe!! I gave it a 5 star simply because of how good it sounds, the ingredients and simplicity. Will definitely update once I make it. This recipe seems to be a great starting point for just about anything you might want to put into the crust. Going to experiment a lot!! Off the top of my head, I can see it with mushrooms, chopped cashews, just about anything your heart desires...

Baked Teriyaki Chicken

Reviewed: Jul. 9, 2011
LOVED this sauce!!! Even my EXTREMELy finnicky-eater grandson ate TWO thighs, and requested left-overs a couple days later. When I heated him up one, he asked for the other as well...you just don't know how hard it is to get him to eat anything!! For those reviewers who said to cut the sugar...I say DO NOT mess with this recipe!! It is WONDERFUL as written. The only thing I did different was to turn and coat every 15 minutes rather than every 10 minutes. Since I used skinless thighs (didn't want to, but had no choice...), I did cover the pan the first 30 minutes. THESE TURNED OUT FANTASTIC!!

Stuffed Chicken Valentino

This was ok, but really lacked flavor. Nothing stood out. Will try again, modifying to fit my family's tastes. First thing to add is garlic!!

Restaurant-Style Coleslaw I

Reviewed: Jun. 27, 2011
This dressing is DELICIOUS!! I used only 1/4 C sugar, because I added raisins to the slaw. Personal preference...what's slaw without raisins??!!!

Creamed Eggs on Toast

Reviewed: Apr. 24, 2011
LOVE this!! I've been eating Creamed Eggs for as long as I can remember! As another reviewer, I always add peas to the mixture, and don't separate the yolks, just chop the whole egg and add it. Much easier. Never tried it with bullion before, just added my own spices. Very good recipe. Thanks for sharing!

Nanaimo Bars III

Reviewed: Apr. 9, 2011
Been making these for over 40 years!! My mother-in-law (Scandanavian descent) had been making them all her life. She gave me her recipe. However, we call them Chocolate Butter Creams. Whoever said these came from Canada 30 years ago, as I've seen in other websites, is sorely mistaken. Regardless, they are YUMMY!!

Caldo Verde (Portuguese Green Soup)

Reviewed: Nov. 30, 2010
6 STARS!!! I haven't had Caldo Verde in almost 20 years, since I left the Azores! Have been craving it like crazy...Found Linguica at the local grocery store, and made it that night! They didn't have any good kale, so I substituted fresh spinach...Incredible!! Thanks for the recipe...I'll be making it over and over.

Meatball Nirvana

Reviewed: Jun. 22, 2010
This recipe is delicious!! I didn't have any milk in the house, so substituted an egg. Other than that, made as listed with the exception of salt. Used only half the amount of salt, because I'm not a big salt fan, and rarely use it. When I do, I cut it in half. I like to taste the food- not salt.

This casserole is SSOO good! As vegetarians, we used 'pretend' sausage, and it works! Delicious!
