Delicious Ham and Potato Soup
This recipe is very good for large groups as well as being easy to convert to vegetarian. I cooked it for my crew, and everyone loved it. I went by the recipe for the meat-eaters, and for the vegetarians I used veggies instead of ham (broccoli works well) and vegetable bouillon instead of chicken. You could also easily make this gluten free by using cornstarch mixed with water rather than the flour and butter.

Chicken Enchiladas I
The crew on my boat loves this!! I used enchilada sauce instead of taco sauce, but did the rest just like it says. This is also easy to convert to vegetarian (substitute TVP for the chicken) or Kosher (leave out the dairy and add some veggies. =)

Deep Chocolate Raspberry Cake
I really liked this cake recipe. I made it for a coworker's birthday and it was a big hit. I made a few revisions. Instead of using jam I found a recipe for raspberry filling that called for fresh raspberries, water, and cornstarch. Also, I added some strawberries to the filling.
