Pineapple Upside-Down Cake VII

Four stars because I changed some things, but overall very good. I used only 2/3 c. brown sugar because I used a 9x13 pan and that amount covered the bottom of the pan. It made the "crust" very buttery though since I still used 1/2 c. butter. Like many others, I used the pineapple juice for the water in the cake mix. I also used a pineapple cake mix. And I didn't use cherries at all since I don't like them. I did use a can of pineapple chunks instead of rings and that worked just fine. Made a very moist cake and I will make it again.

Yummy Chocolate Chip Oatmeal Cookies

Definitely one of the best cookie recipes I have tried. These were soft and I loved the cinnamon. I used only 2 c of oats instead of 3 and substituted butter Crisco instead of real butter. These are so good and yes, they do make about 5 dozen cookies not 2 dozen. And I did have these for breakfast, lunch, and dinner (but not all on the same day)! :)

Baby Shower Raspberry Dip

This was fabulous! I made it for a BBQ and just served it with strawberries and there was nothing left over! I used raspberry extract, but added about 1/2 tsp more because I wanted a stronger taste. It mixed up plain white, so I did add about 2 drops of food coloring, but next time would just use 1 drop. Will definitely make this again!

Sour Cream Chocolate Frosting

This frosting was fabulous! However, I tasted it after adding only 2 cups of sugar and liked it better and wished I hadn't added the last 3/4 c. The last 3/4 c. made it too sweet and you couldn't taste the tang of the sour cream. Will definitely use this recipe again, but with the modification of only adding 2 c. sugar. (Also, I learned that you shouldn't chill this frosting or it will set up too thick and you'll have to soften it in the microwave for a few seconds.)

Lemon Cream Cheese Frosting

This frosting was incredible! However, I only used 2 cups of powdered sugar instead of 5 suggested because I liked the taste at 2 cups. Still had a nice lemon flavor and wasn't too sweet/sugary. It was still spreadable and very smooth and creamy. Definitely will use this recipe again.
