Egg in a Hole

Yes, many names. My Dad called them Hobo Eggs, my husband calls them Toad in the Hole. I make them with Thomas' Bagel Thins, but you have to enlarge the hole! Butter, butter, butter. After flipping over I put a thin slice of ham on top, and cover skillet until the ham is warm.

Hamburger Soup

You can't screw this up! Just add your favorite veggies and you're good to go. You can also add some unrinsed, dry barley to thicken it, the amount depends on how thick you like your soup. This is a very old dish, from the depression according to my Grandma, when people really had to stretch their dollars.

Polish Meat and Potatoes

Anytime "Polish" is in the recipe name, it's not going to be lowfat and/or healthy. Not something you'd make every week, but sure is good on a cold night after shoveling your way into the house! Comfort food is not known as "healthy" food. Good Polish Girl!

Steak on a Stick

Key West Chicken

Hubby is not a novice griller, and his specialty is chicken. This was not good! Very dry, and it burned by the time he got it to the correct temp. Will try again with more lime juice, but will elevate it from the grill rack (our grill isn't adjustable so we use foil racks) and will keep some of the marinade for basting. Served with a prepared box of Goya Carribean rice mix, which is dellicious.

Easy Pina Colada French Toast

I cut the loaf of soft Itallian bread into thick slices the night before and let it dry out on the counter top. Only needed 5 eggs and used 1/2 cup each of milk & mix (next time will use more mix). I addeed a few drops of coconut extract and a few chunks of canned pineapple with about 2 tbsp. of pineapple juice. Put it in the blender for a a really smooth batter. Served topped with a slice of bacon and a pineapple ring - a definite keeper!

Creamed Eggs on Toast

For the reviewer who said it looked like something the dog threw up, instead of following the directions for the eggs in the recipe, slice them as suggested by one other reviewer, but then just put the slices on buttered toast and pour basic white sauce over all. Looks nice and taste fantastic!

Fantastic - wouldn't change a thing. I used butter to "grease" the pan and had very large shrimp (12 - 15 per pound) so baked it just a bit longer. Thank you for a fantastic meal!

Taco Soup I

Magic Mango Bread

This is delicious, but stuck to the bottom of the pan. I used light colored non stick bread pans, lightly greased (per the directions) with Crisco. Has anyone else had this problem? I was able to loosen the sides with a plastic knife, but the bottom stuck on both loaves. It was definitely done, the toothpick was clean, and any longer would have burnt the tops.

Soft and Chewy Peanut Butter Cookies

Better than Mrs. Fields! I added a bit more peanut butter (about 1/8 cup), and a bag of milk chocolate chips. Don't need to press them down, they bake fine right from the spoon. Definitely a keeper!
