Bourbon Whipped Cream

So easy and delicous. Really good on pumpkin pie- it gives it that "something special" taste. Used 1 1/2 tablespoons as the recipe suggests and we did not think it was too strong at all.

Chicken Wild Rice Soup

Slow Cooker Chicken and Dumplings

I used cream of mushroom soup because I don't like cream of chicken. I also used chicken broth instead of water and added a good dose of black pepper. At the last minute I threw in some green peas just to get some veggies in. My husband and I really like it. Easy, cheap, and fast!

Nutty Pumpkin Muffins

Made these on a whim this morning because I had some pumpkin to use up. I used splenda instead of sugar and pecans as the nuts because it was what I had on hand. I also substituted the cinnamon for pumpkin pie spice. The muffins are very moist. Not very sweet either. Overall, good- my husband loved them.

Pumpkin Chili

This was okay, but being from Texas I prefer my chili really spicy. I decided to try this because of my love for pumpkin. I used all low sodium ingredients and only added 2 tbsp of sugar because I was afraid of it being too sweet. Not bad but just not my taste.

Sausage Smothered in Red Cabbage

This was really good but I decreased the salt from 3 to 2 teaspoons and would further decrease it to 1 1/2 teaspoons when I make this again. I also used a light smoked sausage to make the dish healthier. The apples did get mushy so I would add them further along in the cooking process next time.

Ratatouille Bake

Easy and good. I had to cook the vegetables longer than the recipe called for and on medium high heat because they were taking so long to cook. I ended up doubling the fresh vegetables and ravioli amounts and added 1 can tomato sauce.

Chocolate-Dipped Fruit

This tasted good, but so much chocolate was wasted because it hardened to quickly and reheating didn't help. I dipped dried apricots and fresh strawberries...delish!

Baked Slow Cooker Chicken

I am basing this review on method alone. It definitely needs more spices- I used salt, pepper, paprika, and garlic powder under the skin and filled cavity with lemon, onion, and garlic. Came out very moist and flavorful. I took the advice of another reviewer and filled the foil with potatoes and then made mashed potatoes with them. Will definitely use this method again but with my own twist on flavors.

Grilled Salmon I

I am not a big fan of salmon unless it is grilled because that seems to take away some of the fishiness flavor. This recipe was outstanding. I loved what I was eating instead of it being just okay as salmon usually is for me!

Terry's Texas Pinto Beans

I had to add salt at the end of cooking to enhance flavors. I also added more cumin and jalapenos than the recipe called for. Would also be good with some canned adobo peppers. I would say a good starting recipe but needs modifications. I made in the slow cooker on low 8 hours after soaking overnight.

Seasoned Broccoli Spears

I'm rating the method rather than the overall flavor because I used different seasonings (salt, pepper, garlic powder) because I don't like thyme and didn't have any lemon pepper. This was very good and easy for a basic steamed broccoli method. I will definitely keep handy for a quick go to side dish. Tastes much better than frozen broccoli.

Slow Cooker Blackberry Pork Tenderloin

I substituted red raspberry jam instead of blackberry and used the jam for the sauce instead of the whole fruit. Was very flavorful. Dried out slightly but it was my fault because I cooked it too long. Will make again.
